How to make the gochujang sauce.

  • Gochujang sauce: it’s a spicy and savory fermented sauce common in the Korean cuisine.
  • Brown sugar: adds sweetness to a savory and spicy sauce.
  • Ginger paste: adds a burst of freshness.
  • Garlic paste: balances the saltiness with more savory notes.
  • Sesame oil: has a nutty taste.
  • Rice vinegar: a less acidic and sweeter version of distilled white vinegar.
  • Honey: adds sweetness to the dish.
  • Soy sauce: adds umami flavors to an already diverse flavor profile.

The secret to this recipe is gochujang paste. It’s a sweet and spicy, fermented condiment. It comes to us from Korea and it’s amazing in sauce and marinades. If you like kimchi and those funky flavors, you will love gochujang. And if you never had it before, I highly recommend you give it a try.

The gochujang sauce will work as a marinade as well as finishing sauce for the grilled Gochujang wings.

In a mixing bowl, add gochujang paste, minced garlic and ginger, soy sauce, sesame oil, rice vinegar, brown sugar and honey.  Mix the ingredients together until you get a thick dark red liquid.

Pour half of the sauce on the wings, toss them and let them marinade for 30 minutes. You can use pre-cup party wings or whole chicken wings. Use whichever one you like better.

How to grill Gochujang wings.

Heat up the grill to 350 degrees and set it for indirect heat. Place the marinated wings directly on the grates and let them cook for 40-45 minutes or until the internal temperature reaches 185 degrees.  Flip the wings half way through to ensure an even cook throughout.  In the last 5 minutes of the cook, brush the wings with the left over gochujang sauce allowing it to caramelize on the grilled chicken wings creating a tacky and sweet coating.

Remove the grilled Gochujan wings from the grill and allow them to rest for 10 minutes. I like to finish them off with sesame seeds and green onions. Serve and enjoy!

Frequently Asked Questions:

Can I make this in the oven or stove top?

Absolutely! Follow the same times and temperatures as listed in the recipe. The only downside of making these in the oven is that you won’t have that delicious mild smokey flavor.

How can i make this recipe less spicy?

If you want to try the gochujang paste but not make it too spicy, just use less of it in the recipe. Start with 1/4 and go from there. Next time you can use 1/2 and see how you like that.

Grilled Gochujang Wings

If you are looking  to change up your wing recipe then these wings in gochujang sauce are what you need.
Prep Time: 30 minutes
Cook Time: 1 hour
Servings: 4 People

Ingredients 

  • 2 lb Chicken wings
  • 1/4 cup Gochujang paste
  • 1/4 cup Soy sauce
  • 1/4 cup Brown sugar
  • 2 tbsp Rice vinegar
  • 2 tbsp Honey
  • 1 tbsp Minced garlic
  • 1 tbsp Minced ginger
  • 1 tbsp Sesame oil

Instructions 

  • In a mixing bowl, add gochujang paste, minced garlic and ginger, soysauce, sesame oil, rice vinegar, brown sugar and honey.  Mix the ingredients together until you get a dark red thick liquid.
  • Pour half of the sauce on the wings, toss them and let them marinade for 30 minutes.
  • Heat up the grill to 350 degrees and set it for indirect heat. Place the marinated wings directly on the grates and let them cook for 45-60 minutes, flipping halfway through, until the internal temperature reaches 185 degrees. 
  • During the last 5 minutes of the cook, brush the wings with the left over gochujang sauce.
  • When the wings are done, remove them from the grill and let them rest for 5-10 minutes. Garnish with sesame seeds and scallions, serve and enjoy!

Notes

For less heat, use less gochujang paste. It’s a very flavorful but also spicy condiment. 
For crispy skin on your chicken wings, always cook it at a higher temperature. I like the range 350-375 degrees.

    This one is perfect if you like spicy wings! Using the gochujang paste adds a ton of flavor to the wings. I hope you like it as much as i do!

    This sauce is killer and was my first time using Gochujang paste. My whole family loves it. We have used the sauce for wings but have also prepared chicken tenders with it over a dozen times already, cooking the tenders on the grill, air fryer or carbon steel pan. You can get different heat levels of gochujang paste from Amazon so I can custom tailor the heat.
