Start by adding lemon zest from 2 large lemons. Next squeeze the lemon juice. 2 lemons should provide about 1/2 cup of juice. Add in dijon mustard, dried oregano and thyme, olive oil, honey, Dad’s All Purpose seasoning and freshly minced garlic.

For this recipe, I went with bone-in, skin on chicken thighs. That’s my personal preference, but boneless thighs or chicken breast will do just fine.

Add the chicken to the marinade making sure to get good coverage. Place it in the fridge for a minimum of 1 hour.

Let’s make dinner! This Grilled Greek Lemon Chicken is such an easy and delicious recipe to make. Best of all it requires little time, minimal ingredients and effort.

Preheat the grill to a medium heat around 350 degrees Fahrenheit. Set up the grill for dual zone grilling meaning you have a direct hot side and a cooler side.

Dual heat zones are created differently depending on the type of grill you have.

  • Gas grill: Turn the burners on one half of the grill. For indirect heat, place food on the opposite end.
  • Charcoal grill: position the heated charcoal to one half of the round bowl. For indirect heat, place the food on the opposite end.
  • Komodo style grill: use a plate setter that will deflect direct heat from the food on the grates.

Remove the marinated chicken and place it on the indirect side first, skin side up. No need to flip the chicken here. For for about an hour until the internal temp reaches 160 degrees.

Next, move it to the direct side to get a nice char all around and crispy skin. This is where you flip the chicken every 1-2 minutes.

Because I used bone-in chicken thighs, the doneness temperature will be 175 degrees. Remove the chicken and let it rest.

If you are grilling chicken breast, move it to the direct side once it hits 150 degrees. Sear it on both sides. Final temp should read 160 Fahrenheit. It will come to full temperature during the resting period. This will ensure juicy, tender and flavorful meat.
