Brochettes are bite size marinated proteins cooked on a stick. For my recipe, I decided to make grilled beef brochettes for which I used beef tenderloin and marinated it in a red wine sauce and finished it off with a drizzle of horseradish. And wow, did it taste good! The tenderloin, while a tender cut, it does not have much flavor by itself which makes it perfect for marinades. With each bite, you get a hint of the red wine followed by a kick from the crushed red peppers and horseradish. This is a must try! Let me show you how.
How to make the red wine marinade.
The marinade is pretty simple. In a mixing bowl, pour in red wine, olive oil, minced garlic, crushed red peppers, salt, pepper and oregano. Mix the ingredients together and set aside while you prepare the beef. For this recipe I went with Meiomi Pinot Nior. I recommend going with a Pinot Noir which is less dry and smoother than a Cabernet.
How to grill beef brochettes.
Before the beef brochettes hit the grill, they first need to marinade to absorb all those wonderful savory flavors.
To start off, cube up the beef tenderloin into bite size 1 x 1 inch cubes. Mix in with the red wine sauce and let them marinade for at least 2-3 hours.
Next, skewer the marinated beef cubes and it’s time to hit the grill.
Heat up the big green egg to 400 degrees. Place the skewers on direct heat and flip them frequently which ensures an even cook throughout. After 5 minutes, remove the grilled beef brochette off the grill, drizzle with some horseradish and enjoy!
