I made this recipe on my griddle, but it can easily be replicated on the stove top using the same measurements and temps.

Start by preheating the griddle to medium/high heat and spreading some olive oil on the surface. Add an entire 30oz bag of frozen shredded hash browns. Spread them apart. This will help them cook faster and build a nice crispy crust everywhere. Be sure to season with salt and pepper. No one likes bland potatoes. Cook the hash browns for about 4-5 minutes and flip. Repeat and continue to cook and flip until you get nice crispy edges.

Next, add 1 pound of breakfast sausage on the griddle. If your cooking area is large enough, you can do it while the hash browns are on. Break apart the sausage and flip and continue to cook until you build a nice crust. DON’T skip this step. The crust is crucial!

In a bowl, whisk 6 eggs and 6 tablespoons of milk. Drop the heat to low and pour the mixture on the griddle. These will cook super fast so don’t walk away. And just like we did with the potatoes, add salt and pepper. When the eggs are almost done, remove them from the griddle and into the bowl with the sausage and hash browns.

There are a few final pieces before we can begin assembling the meal. First, add an entire bag of shredded cheddar into the bowl with the cooked ingredients and season with Dad’s All Purpose seasoning. Gently fold everything together.
