Step 1: Prep the chicken skewer ingredients
When using chicken for skewers, I highly recommend chicken thighs over breast. Thighs are fattier and more flavorful, while the breast is leaner and has a tendency to dry faster.
There is a large variety of veggies to use on skewers. The most important part is that they are crunchy to begin with. Options include
- Bell peppers
- Hot peppers (if you dare)
- Mushrooms,
- Small tomatoes (cherub)
- Zucchini
- Asparagus
- Fruits (pineapple, peach, apple)
- Onion
Start by cubing up the chicken thighs. It’s important to get the pieces roughly the same size so the chicken will cook evenly.
Next, cube up the veggies you picked into the same bite size pieces. For this recipe, I decided on yellow and red bell peppers and red onion. Keeping it simple. Use veggies you already have in the fridge to reduce waste.
Throw everything into a large mixing bowl, lightly coat with olive oil and season with Dad’s All Purpose rub. It’s the perfect balance of bbq flavors from salt, pepper and paprika.
Next, skewer the individual chicken and veggies pieces onto a skewer stick and these are ready to hit the grill.
Recipe Tip
- If using wooden skewers, soak them in water so they can absorb the moisture and not burn during the cooking process. I recommend using metal skewers. They are reusable and durable.

Step 2: Grill up the chicken skewers
Set the grill to high direct heat at 450 degrees and place the chicken skewers on the grill. Flip every minute for a total of 10 minutes or until the meat reaches 175 degrees internal temp.
Before serving, brush the skewers with the your choice of BBQ sauce. For this recipe, I went for convenience and used a family favorite Sweet Baby Rays. Once the sauce caramelizes over the chicken skewers, remove them off the grill and let them rest for 5 minutes. Serve and enjoy!

Yes, any chicken thigh recipe can be replaced with the breast. The breast is leaner than the thighs, therefore remove the meat at 160 degrees and let it rest. This will ensure a tender and juicy chicken breast.
