Unlike traditional burgers, the meat cooks inside the pita, locking in moisture and infusing every bite with seasoning and charred goodness.

- Ground beef: rich, juicy, and deeply savory, ground beef forms the heart of arayes. As it cooks inside the pita, it absorbs the spices and releases flavorful juices that keep the filling tender and satisfying, creating that perfect balance of smoky, meaty goodness.
- Jalapeno: fresh jalapeño adds a bright, zesty heat that cuts through the richness of the beef. It brings a subtle crunch and a mild kick that enhances the overall flavor without overpowering the dish.

- Seasoning: I used taco seasoning for a bold and smoky flavor with a hint of warmth with spices like chili powder, cumin, and paprika. And the all purpose seasoning that is versatile and balanced, tying everything together with a savory mix of salt, garlic, herbs, and spices
- Greek yogurt: cream and tangy base for the avocado dipping sauce.

- Avocado: creamy and buttery with a mild, nutty flavor, avocado adds richness and a smooth texture to the sauce.
- Pita bread: soft and airy on the inside with a slightly chewy texture, pita bread becomes beautifully crisp and golden when grilled. It acts as the perfect vessel for the seasoned beef.
Prep the Beef
This Grilled Beef Arayes recipe comes together fairly quickly, which makes it the perfect lunch or after school snack recipe. Prep the beef mixture the night before and grill it up the next day to save even more time.

In a large bowl, add ground beef, chopped jalapeno, freshly squeezed lime juice, cilantro and red onion. Add some minced garlic and season with Dad’s Taco seasoning which has traditional Mexican inspired flavors of cumin, chili and lime. I also used Dad’s All Purpose rub for the everyday salt and pepper notes. Mix everything together. Avoid over-mixing to keep the meat tender.
Recipe Tip
For some extra heat, add some hot sauce.
If you are concerned about meat being to dry, use an 80/20 blend or add a 1/4 cup of greek yogurt into the mix.

Stuff the Pitas
Pitas are delicate and depending on where you purchase them, might be on the dryer side. To avoid tears, wrap the pita in a moist paper towel and place in the microwave for 10-20 seconds.

Next, slice the pita breads in half and gently open it up to form a pocket. Delicately, stuff each pocket with a thin layer of the beef mixture. Spread in evenly from edge to edge. Once filled, press light on the pita so the filling adheres to the bread.
Recipe Tip
Overstuffing pita will result in the bread ripping and possible undercooked meat inside.
Time to grill up the Beef Arayes
These Grilled Beef Arayes were cooked on my griddle. Don’t have one, no problem, use a cast iron skillet or frying pan and cook it in your kitchen.

Preheat the grill or skillet to a medium heat and add some olive oil. Once that’s hot, place the beef stuffed pitas down opening side first to sear the meat inside the pita. Next, flip it over to one side and cook for 2-3 minutes, flip and repeat. Continue this until the internal temperature of the meat reaches 145 degrees Fahrenheit. By this time, the pita should be golden brown in color and all the pink is gone from the beef.
Remove it from the grill and let it rest.
How to make an Avocado and Cilantro Dipping Sauce

While I made this Avocado and Cilantro sauce for the Grilled Beef Arayes, it’s so good, you’ll catch yourself making it all the time.
In a blender, add greek yogurt, mayo, cilantro, half an avocado and freshly squeezed lime juice. Add water and season with Dad’s Taco Seasoning. Blend the ingredients together. Add more water and mix depending on you consistency preference.

- 1/2 Red onion, diced
- 1/4 cup Cilantro, chopped
- 1 tbsp Minced garlic
- 1 tbsp Taco seasoning
- 1 tbsp All purpose seasoning
- Juice from a lime
- 4 Pitas
Avocado and Cilantro Sauce Ingredients
- 1/2 cup Plain greek yogurt
- 1/4 cup Mayo
- 1/2 cup Water
- 1/4 cup Cilantro
- 1 tbsp Taco seasoning
- 1/2 Avocado
- Juice from a lime
Instructions
- In a large bowl, add the ground beef, diced jalapeno, cilantro, red onion, minced garlic and season with a taco and all purpose rubs. Mix everything together.
- Slice the pita breads in half and gently open them to form pockets.
- Delicately, stuff each pocket with a thin layer of the beef mixture. Spread in evenly from edge to edge. Once filled, press light on the pita so the filling adheres to the bread.
- Preheat the grill or skillet to a medium heat and add some olive oil.
- Place the stuffed pitas on the griddle, meat side down first and sear until golden brown. Next, flip it over to one side and cook for 2-3 minutes, flip and repeat. Continue this until the internal temperature of the meat reaches 145 degrees Fahrenheit.
