Are there days you just crave a really good BBQ Chicken Sandwich?  Well, I do all the time.  This quick and easy recipe is the perfect lunch or dinner option that is full of delicious flavors.  It’s savory, gooey with a little kick.  Cooked on a griddle, this cubed up bbq chicken sandwich is my new go to recipe.

  • Chicken: I went with chicken thighs for this recipe, however chicken breast is a great alternative.
  • Cheese: any sliced cheese works with this recipe. I decided on Colby Jack for it’s mild flavor and great melting properties.
  • Onion: sliced red onion add texture and sharpness.
  • Bread: french mini rolls are my favorite sized buns for this recipe.
  • BBQ Sauce: if I’m not making my own sauce, I always go with Sweet Baby Rays BBQ sauce. It’s sweet and my kids love it.

Step 1: Prep the BBQ chicken.

With only a few ingredients, this recipe is the perfect grilled summer BBQ sandwich.  Everyone will enjoy it at your next BBQ.

Start with slicing chicken thighs into 1 x 1 inch cubes.  In a mixing bowl, add the chicken, sliced red onion, Dad’s All Purpose Rub and some olive oil.  Mix it all together and set aside.

Chicken breast is a great alternative to thighs if you are looking for a leaner cut.

Not a fan of chicken, cube up pork tenderloin or use de-shelled shrimp.

Step 2: Time to grill up BBQ Chicken Sandwich

For the cook I used my Weber Slate griddle. No griddle, no problem! Replicate this BBQ Chicken Sandwich recipe in a cast iron skillet, on the stove top or in an air fryer.

Preheat the griddle to a medium high heat.  Place the seasoned chicken on the flat top and continuously flip to get an even cook throughout.  Next, add in your favorite BBQ sauce and continue mixing.  I used a store bought sauce for convenience, but if you’re looking for a homemade recipe, check out my sweet and tangy BBQ sauce recipe.

Once the chicken reaches an internal temp of 165 degrees, place slices of colby jack cheese over the entire pile. Place a lid over the top to allow the cheese to melt.

Recipe Tip

Cheese options are endless in this recipe. For a creamy finish use a Mozzarella or Colby Jack. Want some sharpness go with a Cheddar or Provolone cheese. Or for some heat use Pepper Jack.

Toast up some mini french rolls and scoop up a generous serving of the BBQ chicken mixture into the roll.  Enjoy!

What to do with leftovers.

Made too much BBQ chicken? Store in an airtight container in the refrigerator. Enjoy it with a salad for lunch the next day or make yourself another delicious BBQ chicken sandwich!

How do you know when chicken thighs are cooked?

While the ideal cooked temperature for chicken is 165 degrees Fahrenheit, thighs can be cooked to a higher temperature. They are fattier than other cuts of chicken and need more time for the fat to render. Cook to 175 degrees for the perfect tender and juicy thicken thighs.

Can you put BBQ sauce on the griddle?

Yes, you can use BBQ sauce or any sauce when cooking on the griddle. Sauces are usually high in sugar with can burn on a hot surface. Lower the heat and continuously flip to avoid burning the food.

Ingredients 

  • 6 Slices of colby jack cheese
  • 8 Chicken thighs
  • 4 Mini french rolls
  • 1 Red onion
  • 2 tbsp All purpose rub
  • 1/4 cup BBQ sauce

Instructions 

  • Slice chicken breasts into 1 x 1 inch cubes.  In a mixing bowl, add the chicken, sliced red onion, all purpose seasoning and olive oil. Mix it all together and set aside.
