In a large bowl, add the ground beef, diced jalapeno, cilantro, red onion, minced garlic and season with a taco and all purpose rubs. Mix everything together.
Slice the pita breads in half and gently open them to form pockets.
Delicately, stuff each pocket with a thin layer of the beef mixture. Spread in evenly from edge to edge. Once filled, press light on the pita so the filling adheres to the bread.
Preheat the grill or skillet to a medium heat and add some olive oil.
Place the stuffed pitas on the griddle, meat side down first and sear until golden brown. Next, flip it over to one side and cook for 2-3 minutes, flip and repeat. Continue this until the internal temperature of the meat reaches 145 degrees Fahrenheit.
Remove the grilled beef arayes from the grill and let them rest.
In a blender, add all the sauce ingredients and mix until smooth and creamy.
Dip the Grilled Beef Arayes in the creamy sauce and Enjoy!
Notes
Make sure to use a 80/20 beef mixture to avoid dry meat.
For some extra heat, add some hot sauce.
If you are concerned about meat being to dry, use an 80/20 blend or add a 1/4 cup of greek yogurt into the mix.
Overstuffing pita will result in the bread ripping and possible undercooked meat inside.
Replace mayo with Mexican crema for a more liquid base.
