To get started, first season the chicken. I used boneless chicken thighs as they are fattier which makes them more flavorful and tender. You can substitute with sliced or pounded chicken breast. Season both sides of the chicken with the Jalapeno Ranch seasoning and set aside to allow the rub to absorb into the meat.
Next, preheat the griddle to a medium heat and place bacon strips on the flat top. Getting the bacon on first will allow us to cook the chicken in the flavorful bacon grease. Estimate 1 strip of bacon per slider.

Now that the bacon is cooked, place the seasoned chicken thighs on the flat top in the bacon grease. Cook 2-3 minutes per side until the internal temp reaches 160 degrees.
