I will show you how easy and simple it is to grill a filet mignon for the perfect medium rare every time.
To start, make sure the steaks are room temperature. If not, remove them from the fridge and let them sit on the kitchen counter for a few minutes.
Start by drizzling some olive oil on the steaks for the binder. Next, season the steaks with Dad’s Steak seasoning. This rub has the perfect balance of salt, pepper, herbs and butter. All the flavors of a well basted restaurant quality steak.
Make sure to get an even coating all around. Set aside and allow the meat to sweat and absorb the flavors.

Ingredients are simple. In a sauce pan add a stick of butter, a generous spoonful of minced garlic, diced shallot, chopped parsley and a sprinkle of Dad’s Steak seasoning. Place the sauce pan on the grill along with the steak.

The beauty of grilling steak is how simple the process really is. If you are making this at home on the stove top, make sure to use a cast iron skillet. The added benefit of grilling it is the delicious charcoal and smoke flavor that cannot be replicated in the kitchen.
Preheat the grill to a high heat and set it for dual zone cooking. This creates direct and indirect heat sides.
How to create dual zone heat on grills
Dual zone heats are created differently depending on the type of grill you have.
- Gas grill: Turn the burners on one half of the grill. For indirect heat, place food on the opposite end.
- Charcoal grill: position the heated charcoal to one half of the round bowl. For indirect heat, place the food on the opposite end.
- Komodo style grill: use a plate setter that will deflect direct heat from the food on the grates.
For the perfectly grilled filet mignon, start by placing the seasoned filet mignon’s on the indirect side first. This is called the reverse sear method which slowly cooks the meat inside and evenly edge to edge. Close the lid and bring the internal temperature to 110 degrees. Next, move them to the direct side for the final sear and basting.
Sear the steak 1-2 minutes per side. Brush the garlic butter sauce over the filet mignon’s. Flip over and repeat the process. Be careful for flare ups. The grease will cause flames to shoot up as the baste the steaks.

- Medium-well: 140-150°
Remove the steaks at the desired cook temperature. For the perfectly medium rare, which is how I enjoy my steaks, remove them between 120 and 130 degrees internally. This will ensure a beautiful red center and seared outside.
Let the filet mignons rest for 10 minutes. This process is very important to ensure a tender and juicy steak, especially a filet mignon that does not have a lot of fat.

- 1 stick Unsalted butter
- 1 tbsp Dad's steak seasoning
- 1 tbsp Minced garlic
- 1 Shallot
- Handful of parsley
Instructions
- Remove the steaks from the fridge and let them get to room temperature by leaving them on the kitchen counter for a few minutes.
- Drizzle the steaks with olive oil and season on all sides with Dad's Steak seasoning.
- In a sauce pan add a stick of butter, a generous spoonful of minced garlic, diced shallot, chopped parsley and a sprinkle of Dad's Steak seasoning.
- Preheat the grill to high heat and set it for dual zone cooking.
- Place the seasoned filet mignon's and the sauce pan on the indirect side first. Close the lid and cook until the steaks reach an internal temperature of 110 degrees.
- Move the steaks to the direct side for the sear and basting.
- Sear the steak 1-2 minutes per side, brushing each side with the melted garlic butter sauce.
- Remove from the grill and let the steaks rest rest for 10 minutes.
