Remove the steaks from the fridge and let them get to room temperature by leaving them on the kitchen counter for a few minutes.
Drizzle the steaks with olive oil and season on all sides with Dad's Steak seasoning.
In a sauce pan add a stick of butter, a generous spoonful of minced garlic, diced shallot, chopped parsley and a sprinkle of Dad's Steak seasoning.
Preheat the grill to high heat and set it for dual zone cooking.
Place the seasoned filet mignon's and the sauce pan on the indirect side first. Close the lid and cook until the steaks reach an internal temperature of 110 degrees.
Move the steaks to the direct side for the sear and basting.
Sear the steak 1-2 minutes per side, brushing each side with the melted garlic butter sauce.
Remove from the grill and let the steaks rest rest for 10 minutes.
Before serving, add another spoonful of the deliciously rich garlic butter over the top and enjoy!
