These beer cheese hotdogs are the perfect tailgating snack. They are packed with flavor, filling and already have beer in them. It’s an all in one package. Seriously, they are delicious and always a crowd pleaser. They are fast and easy to make and keep you warm with the saucy beer cheese.
Beer Cheese Tips:
- Shred your own cheese. This will make the sauce more creamy and flavorful.
- Cook at low temperature to melt the cheese slowly and avoid burning
- Keep the beer cheese sauce warm to avoid clumps
Step 1: Sauté the veggies
I like some crunch in my beer cheese hotdogs, so I sautéed some veggies on the grill for that extra texture. This also gives additional flavor to the snack. Because the sautéing process takes the longest, do it first.
Start with slicing a yellow onion and your choice of bell pepper. For this recipe, I went with a green pepper. Preheat the grill to a medium heat and sauté the veggies in a cast iron skillet over direct heat until the they are semi soft in texture. Season with Dad’s All Purpose rub for a touch of flavor.
Step 2: How to make beer cheese
This recipe would not be complete without the beer cheese sauce. It’s simple to make but can easily be ruined if you don’t pay attention.
I decided to shred some cheese for that extra creamy texture, but pre-shredded cheese works too.
Chef tip: If you decide to use pre-shredded cheese, make sure it’s a creamy shredded cheese. Velvetta is also an option if you want to simplify this process even more.
Shred a cup of cheddar cheese and a cup of gouda cheese. Add the cheese to a saucepan, pour in 3/4 of a beer can, more Dad’s All Purpose rub, and cook over low heat. Whisk continuously until you get a creamy consistency. Whisking is key in this process. Do not stop or you risk the cheese to clump and separate from the liquid.
Step 3: Time to grill the sausage
Instead of using regular hotdogs, go with a flavorful sausage. In this recipe, I used Zatarain’s Cajun style smoked sausage and it was great! Savory, smokey with a nice hint of heat, this is the perfect ingredient for the beer cheese hotdogs.
Score the top of the sausages and place them on the grill over direct heat. Turn them every 1-2 minutes to get an even sear on all sides.
Now it’s time to assemble the beer cheese hotdogs. Start by placing the grilled sausage in a hotdog bun. Add some of the sautéed veggies and pour a generous spoonful of the homemade beer cheese sauce over the top. Enjoy!
