Slice a yellow onion and your choice of bell pepper. Preheat the grill to a medium heat and sauté the veggies in a cast iron skillet over direct heat until the they are semi soft in texture. Season with Dad's All Purpose rub for a touch of flavor.
Shred a cup of cheddar cheese and a cup of gouda cheese. Add the cheese to a saucepan, pour in the beer, more Dad's All Purpose rub, and cook over low heat. Whisk continuously until you get a creamy consistency.
Score the top of the sausages and place them on the grill over direct heat. Turn them every 1-2 minutes to get an even sear on all sides.
Assemble.

Shred your own cheese.This will make the sauce more creamy and flavorful.
If you decide to use pre-shredded cheese, make sure it's a creamy shredded cheese. Velvetta is also an option if you want to simplify this process even more.
Cook at low temperature to melt the cheese slowly and avoid burning
