Why Bacon Wrapped Chicken Skewers Are a Grilling Favorite
There’s a reason bacon wrapped recipes dominate grills everywhere. Bacon naturally bastes the chicken as it cooks, locking in moisture while adding layers of smoky, savory flavor. When wrapped around bite-sized pieces of chicken and grilled on skewers, you get the perfect balance of juicy meat and crispy edges.
Skewers also make grilling easier and more controlled. They cook evenly, are easy to flip, and allow you to serve individual portions without slicing or carving. That makes bacon wrapped chicken skewers perfect for entertaining, tailgating, or feeding a hungry family without stress.
Prep and Skewer
For the juiciest Bacon Wrapped Chicken Skewers, boneless, skinless chicken thighs are hard to beat. They’re naturally more forgiving on the grill and stay tender even with higher heat. Chicken breast, a leaner option, works too, especially if you cut it evenly and avoid overcooking.

Thin-cut bacon is the key to success here. Thick-cut bacon often won’t fully render before the chicken is cooked, leaving chewy spots instead of crispy perfection. Thin bacon wraps easily around the chicken and crisps up beautifully over direct heat.
Slice the chicken into large cubes and season with Dad’s All Purpose Rub. Next, slice up bacon strips into 2 equal pieces. Wrap the small strip of bacon around each chicken nugget and skewer a row.
An optional step is to to include canned pineapple chunks between each bacon wrapped chicken piece. This adds sweetness to the recipe, compliments the bacon and chicken and also creates space between each nugget.

Recipe Tip
- If you are using wooden skewers, soak them in water for about 30 minutes before skewering them. This will allow the sticks to absorb enough water to help withstand the direct heat from the grill.

Dad’s Seasonings
Must have grillin seasonings!
Time to grill the Bacon Wrapped Chicken Skewers.
Preheat the grill to 350 degrees and set it for indirect heat. I used my Weber Searwood for this cook, but any grill over oven will work. Follow the same temps.
Place the loaded Bacon Wrapped Chicken Skewers on the grates and grill for 30 minutes or until the chicken reaches an internal temp of 165 degrees.

Before removing them off the grill, brush the skewers with BBQ sauce and allow it to caramelize over the top creating a delicious sweet and savory finish. Cook for another 5 minbutes until the internal temp reaches 175 degrees Fahrenheit and remove from the grill. Now I know you are thinking, that’s way over cooked for chicken. But because the thighs are darker and fattier meat, the temperature can be higher without the risk of overcooking. This will also allow the bacon to get nice and crispy.

Recipe Tip
If you are using a store bought sauce, warm in up in a saucepan or in the microwave before brushing on. It loosens the sauce making it easier to brush on.

Frequently Asked Questions:
Yes, any chicken thigh recipe can be replaced with the breast. The breast is leaner than the thighs, therefore remove the meat at 160 degrees and let it rest. This will ensure a tender and juicy chicken breast.
