Looking for a quick and delicious taco dinner?  These easy pork tacos only took a few minutes to make and were filled with delicious savory and sweet flavors similar to an Al Pastor.  The mix of pork with onion and pineapple is a great weeknight dinner treat or lunch left overs. I used my griddle but you can use any grill or a stove top for this recipe.

Just cube everything.

Easy pork taco ingredients

First, cube up the pork loin into bite size pieces. Drizzle some olive oil for the binder and season with your taco seasoning of choice.  I went with my go to Hardcore Carnivore TexMex.

Next, chop up 2 white onions.  Scoop up 2/3 of the onions into one bowl and leave the rest for later.

Let’s get the griddle going!

Heat up the griddle to 350 degrees or medium heat – depending what you are using as your form of cook top.  As my grease application, I used Bacon Up which is high-quality rendered bacon that adds an additional layer of flavor to the dish.

Start by grilling the pork cubes.  Make sure to continually flip the pieces over to ensure an even cook all around.  Half way through, on a clean surface, add the 2/3 chopped onions over the bacon grease.

Once the pork reaches an internal temperature of 145 degrees, add in the crushed or cubed canned pineapple with the juice.  Mix all the ingredients together and set aside.  The pineapple gives the dish a sweet note that is a great contrast to the savory pork and onion.

Time to assemble these easy pork tacos!

Before starting the taco assembly, make sure to warm up a few corn tortillas on the griddle.  For the taco, add the pork, some freshly chopped white onion that was set aside earlier, freshly chopped cilantro and salsa verde.  This dish is very easy, simple and delish.  You have to try!  Enjoy!

Ingredients 

  • 3 lbs Pork loin
  • 2 White onions
  • 2 tbsp Bacon grease or cooking oil
  • 2 tbsp Taco seasoning
  • 20 oz Can of crushed pineapple
  • 1 pkg Corn tortillas

Instructions 

  • Cube up the pork loin into bite size pieces
  • Drizzle the pork bites with some olive oil for the binder and season with taco seasoning.
  • Chop up 2 white onions.  Scoop up 2/3 of the onions into one bowl and leave the rest for later.
  • Heat up the griddle to 350 degrees or medium heat.
  • Add some grease to the flat top.
  • Start by grilling the pork cubes.  Make sure to continually flip the pieces over to ensure an even cook all around.
  • Next, on a clean surface, add the chopped onions over the bacon grease.
  • Once both reach nice color and reach an internal temperature of 145 degrees, add in the crushed or cubed canned pineapple with the juice.  Mix all the ingredients together and set aside. 
  • Before assembly, warm up the corn tortillas on the griddle.
  • For the taco, add the pork, some freshly chopped white onion that was set aside earlier, freshly chopped cilantro and salsa verde.
