Chicken thighs are so underrated. It’s a great cut of protein that is packed with flavor, doesn’t dry out as quickly as a breast and absorbs marinates and spices well. Simple, savory seasoning and fresh ingredients make for the best fast and easy lunch. These cheese chicken tacos did just that. Packed with flavor, few ingredients, this is a must have recipe staple in the kitchen.

Step 1: The prep work
To ensure a punch of flavor and texture with each bite, cube up the chicken thighs into 1 inch cubes. Drizzle some olive oil for the binder and season with Dad’s All Purpose Rub.
Because this is a fast cook, you won’t have time to prepare the other ingredients for this dish, so get it done before everything hits the griddle. I kept my ingredients simple. For tacos that’s the way to go. Dice up a white onion and some cilantro. Set aside as you will need it soon.

- Use chicken thighs over breasts. They are more flavorful, fattier and juicy.
- Cube up the chicken before placing on griddle. This creates a delicious crust on all sides.

Step 2: How to grill the perfect cheesy chicken tacos
Preheat the griddle to high heat and toss the seasoned chicken on the flat top. Let the chicken sear on one side for 2 minutes and them flip to sear the other. Continue to do so until the internal temp reaches 175 degrees. Darker meat such as chicken thighs require more time to cook properly. This temperature will also ensure the right texture on the chicken. Trust me, you will not over cook the meat.
Once the chicken reaches the correct temp, remove it off the griddle and lower the heat to medium.
Place corn tortillas on the griddle and add a layer of shredded mozzarella cheese over the top. Next, add the grilled chicken to one half of the tortilla, add more cheese and close the taco by folding it in half. Press down with the spatula to create a nice crust on the outside and flip over the repeat on the other side.
Time to stuff the cheesy chicken tacos while still on the griddle. Open the cheesy gooey taco, add some of the chopped onion and cilantro, pour some taco sauce and close. Repeat this for every taco on the griddle. Remove the tacos off the griddle and enjoy while they are still warm and cheesy. Enjoy!

Yes, any chicken thigh recipe can be replaced with the breast. The breast is leaner than the thighs, therefore remove the meat at 160 degrees and let it rest. This will ensure a tender and juicy chicken breast.

- Open the taco, add some of the chopped onion and cilantro, pour some taco sauce and close. Repeat this for every taco on the griddle.
