Wondering what to do with left over chicken?  How about some homemade Chicken Pot Pie Biscuits! This easy weeknight recipe is the perfect fall comfort food. The savory recipe is a meal in itself, loaded with protein and veggies all wrapped in a warm and flaky biscuit make the perfect dinner on the go. Once you try this homemade recipe, there’s no going back to the frozen kind.

Chicken Pot Pie Filling.

With a few simple ingredients, you can make the most delicious chicken pot pie.  In a mixing bowl, add shredded leftover chicken, chicken gravy, frozen carrots and peas, a little bit of seasoning (if your chicken is plain) and shredded cheddar cheese.  Mix all the ingredients together and set aside.

Instead of the traditional pie dough, this recipe requires Pillsbury jumbo biscuit dough.  The canned biscuit dough is perfect for individual servings and makes the recipe much easier to make.

Take each Pillsbury dough piece and roll it out. Next place a spoon full of the filling in each flat round and close it shut, making sure to pinch the ends together. Take a look at my Grilled Chicken Quesadilla for another tasty chicken recipe.

Finally, in a cast iron skillet, lay the filled dough balls with the seam facing down.  Make sure there is room between the dough balls as they will grow throughout the grilling process and finish them off with melted butter.

Grilling The Chicken Pot Pie Biscuits.

Warm up the grill to 350 degrees and set for indirect heat.  Place the skillet with the dough balls on the grill and let if cook for 20-30 minutes or until the outside is golden brown.  No need to worry about meat cooking through since all ingredients were already pre-cooked.

Remove the skillet from the grill and allow them to cool for 10 minutes. They will be very hot inside! Trust me, let them cool down a bit. Once you bite into the biscuit, you’ll get the gooey goodness from the gravy and cheese and the savory taste of the chicken and veggies. Enjoy!

Frequently Asked Questions:

Can I make this in the oven or stove top?

Absolutely! Follow the same time and temperature as in the recipe and you can make these in the oven. The only downside, you won’t have that mild smokey flavor that you get from making them on the grill.

Can I use a different protein?

You sure can! Try this recipe with turkey, pork or even beef. It’s perfect for any leftovers.

Chicken Pot Pie Biscuits

Wondering what to do with left over chicken?  How about some homemade chicken pot pie biscuits! 
Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 4 People

Ingredients 

  • 1 lb Cooked chicken
  • 1/2 cup Frozen carrots and peas
  • 1/2 cup Chicken gravy
  • 1/2 cup Shredded cheddar cheese
  • 1 tbsp All purpose seasoning
  • 1 stick Unsalted butter
  • 1 pkg Pillsbury jumbo flaky biscuit dough

Instructions 

  • In a mixing bowl, add shredded leftover chicken, chicken gravy, frozen carrots and peas, a little bit of seasoning and shredded cheddar cheese.  Mix all the ingredients together and set aside.
  • Roll it out each biscuit dough to form a small flat pizza pie
  • Add a spoon full of the filling in each dough and close it shut, pinching the ends together.
  • In a cast iron skillet or any foil pan, lay the filled biscuit balls with the seam facing down.  Make sure there is room between the dough balls as they will grow as they cook and brush the tops with melted butter.
  • Warm up the grill to 350 degrees and set for indirect heat.
  • Place the pan on the grill and let if cook for20-30 minutes or until the outside is golden brown.
  • Remove the skillet with the chicken pot pie biscuits from the grill, let them cool down for 10 minutes, serve and enjoy!

Notes

  • You can use a rolling pin or just your hands to flatten out the biscuit dough. Make sure it’s roughly the same thickness so it will cook evenly. 
  • Be sure to pinch the seam of the rolled up balls. You don’t want any of the filling leaking out.
