What’s better than Thanksgiving dinner?  LEFTOVERS! Wondering what to do with leftover turkey and gravy?  How about some homemade leftover turkey biscuits! This savory recipe is a meal in itself, loaded with protein and all your favorite thanksgiving sides all wrapped in a warm and flaky biscuit making for the perfect meal on the go. It’s very easy to make and best of all it’s done on the grill. Once you try this leftover thanksgiving recipe, you will make it every year!

Step 1: Turkey biscuit filling

With a few simple ingredients, you can make the most delicious turkey biscuit.  In a mixing bowl, add shredded leftover turkey, gravy, a little bit of seasoning and shredded cheddar cheese, any veggies you have left and Dad’s All Purpose seasoning. Mix all the ingredients together and set aside.

Recipe Tip

If you have any leftover veggies like squash, carrots, green beans or corn use them up in the filling as well.

Instead of the traditional pie dough, this recipe requires Pillsbury jumbo biscuit dough.  The individual servings are a great alternative to this otherwise traditional dish that allow the food to be transported for on the go activities.

If you have a favorite biscuit dough recipe, this is the time to use it. Otherwise, if you are no a baker like myself, the store bought is just as good and convenient.

Take each biscuit and roll it out. Next, add a spoonful of the filling to each biscuit and close it shut but pinching the ends together.

Finally, grease up a cast iron skillet and add the biscuit buns. Make sure there is room between the dough balls as they will grow in size.

Brush the tops with melted butter and season with Dad’s Steak seasoning. It has the perfect balance of butter and herby notes.

Step 2: Grill leftover turkey biscuits

Never thought about making leftover turkey biscuits on the grill?  Well you definitely can!

Preheat the grill to 350 degrees and set for indirect heat.  I used my Weber Searwood XL 600 grill. It made the process very simple and easy. Place the cast iron skillet on the grill and cook for 20-30 minutes or until the outer biscuit layer turns into a nice golden brown color.  No need to worry about meat cooking through since all ingredients were already pre-cooked.

Remove them from the grill and let them rest for 10-15 minutes. They will be super hot and need to cool down. Serve and enjoy!

Leftover Turkey Biscuits

Prep Time: 15 minutes
Cook Time: 30 minutes
Servings: 4 People

Ingredients 

  • 1 lb Leftover turkey meat
  • 1/2 cup Leftover gravy
  • 1/2 cup Leftover veggies
  • 1/2 cup Shredded cheese
  • 1 tbsp All purpose seasoning
  • 1 stick Unsalted butter
  • 1 tbsp Italian or steak seasoning
  • 1 pkg Pillsbury jumbo flaky biscuit dough

Instructions 

  • In a mixing bowl, add shredded leftover turkey, gravy, 1/2 tbsp all purpose seasoning, shredded cheddar cheese and veggies.  Mix all the ingredients together and set aside.
  • Take the biscuits out from the packaging and flatten each one out. You can use a rolling pin or your hands.
  • Add a spoon full of the filling onto each one and close it shut but pinching the ends together.
  • Grease up a cast iron skillet and place the filled biscuit balls inside, makings sure to space them out evenly.
  • Brush the tops with melted butter and season with the Italian or Steak seasoning.
  • Preheat the grill to 350 degrees and set for indirect heat.
  • Place the skillet on the grill and cook for 20-30 minutes or until the outer biscuit crust gets a nice golden brown.
  • Remove them from the grill, let them cool and enjoy.
