Winner, winner, chicken dinner! This one pan chicken dinner is the perfect weeknight meal for the whole family to enjoy! This is a quick and easy recipe that is very versatile and can be repeated multiple times a week by just switching the veggies around. I used a whole chicken that I stood up right and grilled on my Big Green Egg in a bed of veggies. As the chicken roasted, the juices dripped onto the potatoes building on those delicious flavors that makes this a cohesive dish. Yum!
Prep the veggies and chicken.
To start off, in a mixing bowl, add potatoes, baby carrots, chopped corn and garlic gloves. The veggie assortment can vary depending on your preference. Next drizzle some olive oil and salt onto the vegetables and mix well until everything is covered.
Next, pour the seasoned veggies into an iron skillet and wedge the chicken stand in the middle on the pan.
It’s time to prep the chicken! It’s pretty simple. The great part about this recipe is using the whole chicken everyone gets their favorite cut. Season generously with your favorite BBQ rub. For this recipe I used Hardcore Carnivore Sweet Rub. Make sure to coat the entire bird including inside the cavity.
Once seasoned, insert the chicken onto the stand, making sure it’s stable and as far down as it can go.
Let’s grill the One Pan Chicken dinner.
Once the one pan chicken dinner is on skillet, it’s ready to go on the grill. Set the grill for 350 degrees indirect heat. Roast it for 45 minutes to an hour or until the chicken’s internal temp reaches 165 degrees.
Let it rest for 10-15 minutes, serve and enjoy!

- 1 Whole Chicken
- 4 tbsp BBQ rub
- 1/2 cup Olive oil
- 1 tbsp Salt
- 12 oz Petite red potatoes
- 12 oz Petite gold potatoes
