They say, everything is better with bacon, and yes that is so true!! Had some left over pork loin in the fridge and decided to grill some sweet and spicy bacon wrapped pork skewers for a quick and easy dinner.

Step 1: Prep the bacon wrapped pork skewers
Start by cutting the pork loin into strips and then cube into even bite size pieces. It’s important to get the cubes roughly the same size so the pork cooks evenly.
Next, in a bowl, season the pork with Dad’s Sweet BBQ rub drizzle some olive oil and mix together.
Start off by cutting off the ends of the bacon strips and use the middle meaty piece to wrap around each pork cube. Skewer through the bacon to help it fold together while cooking.
Recipe Tip
- If using wooden skewers, soak them in water so they can absorb the moisture and not burn during the cooking process. I recommend using metal skewers. They are reusable and durable.
Dad’s Seasonings
Must have grillin seasonings!
Step 2: Time to grill the skewers
Heat up the grill to 350 degrees indirect heat and cook the skewers for 20 minutes.
Next, take some spicy BBQ sauce of your preference, I used Tabasco Habanero Jerk BBQ Sauce and glaze the skewers while still on the grill. Let it cook for a few more minutes until the sauce caramelizes. Unfortunately, I believe the bbq sauce may have been discontinued. A great option is to make your own sauce. I have a great BBQ sauce recipe on my website. Add your favorite brand of sriracha or hot sauce to the mix to add heat.
Remove off the grill and let it rest for 5-10 minutes. It’s important to always rest your meat after grilling. This allows for everything to relax and redistribute the juices, which creates a more tender, juicier cut.
Finally, you can remove the skewers or eat the bacon wrapped pork skewers right off the stick! Enjoy!
