Bacon Wrapped Pork Skewers

They say, everything is better with bacon, and yes that is so true!! Had some left over pork loin in the fridge and decided to grill some sweet and spicy bacon wrapped pork skewers for a quick and easy dinner.

Ingredients

1 lb Pork Loin
1 pkg Bacon
1 tbsp Olive Oil
1 tbsp Sweet BBQ Rub
2 tbsp Spicy BBQ Sauce

Instructions

Cut the pork loin into strips.
Then cube the strips into even bite size pieces. It's important to get the cubes roughly the same size so the pork cooks evenly.
In a bowl, season the pork with the sweet BBQ rub, drizzle some olive oil and mix together.
Cut off the ends of the bacon strips and wrap around each pork piece.
Skewer through the bacon to help it fold together while cooking.
Heat up the grill to 350 degrees indirect heat and cook the skewers for 20 minutes.
Glaze the skewers with some spicy BBQ sauce while on the grill. Let it cook for a few more minutes until the sauce caramelizes.
Remove off the grill and let it rest for a few minutes. Then enjoy!
