For this Cowboy Butter Steak Bites recipe I used precut sirloin steak tips from Omaha Steaks. You can also ask your local butcher for tips or purchase a whole steak and cube it up into small bite size pieces.

For the seasoning I recommend using something simple since most of the flavor will come form the Cowboy Butter Sauce.

Drizzle some olive oil over the tips and coat lightly with Dad’s Steak seasoning or a blend of salt, pepper and garlic and onion powder.

I used my griddle to cook up the Cowboy Butter Steak Bites. But these could easily be done on a cast iron skillet in your kitchen or any other grill you have.

Preheat the griddle to hight indirect heat around 400 degrees Fahrenheit. Drizzle some olive oil over the flat surface and wait until it gets super hot.

Drop the seasoned steak tips on the griddle – you should hear that satisfying sizzle. Spread them apart making sure each piece has space. This helps each steak bite build a nice crust.

Wait 1-2 minutes and flip the steak pieces. Once the internal temp reaches 130 degrees, remove the bites from the grill and let them rest.

The secret to this delicious Cowboy Butte Steak Bites is the spicy sauce itself. Because it is homemade, you can manage the heat levels to your liking.

This sauce comes together in minutes, therefore I highly recommend you prep, chop and measure out your ingredients ahead of time.

Place a sauce pan on the hot griddle or over the stove top. Drop in 1 stick of butter, minced garlic and pre-measured seasonings include cayenne pepper, paprika and crushed red pepper flakes.

Once the butter is melted, remove it from from the hot surface, drop in the chopped herbs and mix. If you leave the butter on the griddle too long, the fat will separate and you will have to start all over again.
