Step 1: How to Spatchcock a chicken.
For this recipe, I used a whole chicken. The easiest and fastest way to grill a whole chicken and ensure tender juicy meat is to spatchcock it.
To start, cut out the backbone from the chicken with sheers or a sharp knife. This process of spatchcocking or butterflying will allow the chicken to cook more evenly and quickly. Press down hard on the breast bone to break it so the chicken can lay nice and flat. Pat the entire chicken dry.
Next, season the bird with Dad’s All Purpose rub which gives the perfect savory balance to the protein.
Step 2: How to grill the perfect spatchcock chicken.
Preheat the grill to 375 degrees and set it for indirect heat. Place the chicken skin side up and cook until the breast registers an internal temperature of 160 degrees. Total cook time should be around 45 minutes depending on the side of the bird. Move the grilled chicken to the direct side over the coals just shy of 160 degrees to get the skin nice and crispy.
Remove the grilled chicken thighs off the grill and let the rest 10 minutes.
Tips
- Whole chicken many times is cheaper per lb. vs. chicken cuts.
- Use chicken thighs if you prefer pre-cut chicken. It has more flavor and fattiness.
- Make sure to rest the grilled chicken for 10 minutes before slicing.
Step 3: How to make a zesty buffalo sauce.
While the chicken rests, time to prepare the homemade buffalo sauce. The ingredients are simple and you can adjust the level of heat unlike a store bought sauce.
In a saucepan, add half a stick of unsalted butter, regular hot sauce, vinegar and garlic powder. Simmer over low heat until the sauce thickens.

Step 3: Assemble the Buffalo Chicken Sliders.
To start, shred the grilled spatchcock chicken into bite size pieces and drop them into a mixing bowl. Pour the homemade buffalo sauce over the top, add shredded mozzarella cheese. Mix the ingredients together.
Recipe Tip
For an extra punch of flavor and some blue cheese to the cheese mix.
Slice the original Kings Hawaiian sweet rolls down the middle without separating the individual buns. Spread the chicken mixture evenly throughout the bottom layer and sprinkle another generous layer of shredded mozzarella. Cover it all with the top of the bread and brush some melted butter mixed in with the cajun seasoning over the top of the buns.
Place it back on the grill for another 10 minutes to allow the cheese to melt into the sauce and over the chicken. Remove, separate and serve. Enjoy!

The most important step in having juicy patties is the internal temperature. By removing chicken patties at 160 degrees and letting it rest for 10 minutes this will not only trap and redistribute the juices throughout the meat but bring it up to safe to eat temperature of 165 degrees.
Chicken is a very bland protein. Do not be scared to experiment with flavor and use more seasonings. Use strong flavors like garlic, ginger and soy. When seasoning the ground chicken, add 1 tbsp of seasoning per pound.

- 1/2 tbsp Onion powder
- 1/2 stick Unsalted butter
