While I really enjoy traditional Philly Cheesesteak sandwiches, these Chicken Philly Sliders are just as good if not better!  Perfect for game day or party food, these mini samies are filled with deliciously tender and grilled chicken thigh meat, perfectly sautéed veggies all in a soft Kings Hawaiian slider.  

Step 1: How to grill the perfect Chicken Thighs.

I almost always use chicken thighs over breast as the meat is more tender, fattier and full of flavor!  This recipe was no different.  Apply some olive oil to the boneless chicken thighs and season with beef seasoning on all sides and let them sweat for a few minutes while the rub flavors penetrate through the chicken meat.

Set the grill to high direct heat at 450 degrees and place the seasoned chicken on the grill.  Flip every minute for a total of 10 minutes or until the meat reaches 175 degrees internal temp.  The reason for the higher temperature is because thighs are a darker fattier cut they require slightly more time to cook and for the texture to be just right.

Remove them off the grill and let them rest while you prep the veggies.

Step 2: Sauté the veggies.

For that extra flavor and crunch, add some veggies to this recipe.  I went with an onion and green bell pepper.  You can add more color here by mixing different colored bell peppers or add spice with hot peppers.

Dice up the veggies, season with the same beef seasoning as used on the chicken and throw it in a cast iron with some butter.  Sauté the veggies over high heat on the grill until they soften up but still have some crunch to them.

Step 3: Assemble and grill up the Chicken Philly Sliders

Now that everything is grilled and sautéed, it’s finally time to assemble the sliders.  Remove the entire Kings Hawaiian slider loaf and slide across, do not pull apart the separate buns.  Apply a thin layer of mayonnaise and add a generous layer of chopped grilled chicken thighs followed by a layer of the sautéed veggies and provolone cheese slices. Place the entire layered loaf into a foil pan or pan sheet.

Set the grill to 350 degrees for indirect heat.  First place the open faced loaf on the grates allowing the cheese to soften and melt over the meat and veggies.  Next, cover with the slider loaf top and brush melted butter and garlic mixture over the top.  This gives the sliders an extra layer of flavor to an already delicious dish.  Keep it on the grill for another 1-2 minutes and remove to serve.

Frequently Asked Questions:

Can I use chicken breast instead?

Yes, any chicken thigh recipe can be replaced with the breast. The breast is leaner than the thighs, therefore remove the meat at 160 degrees and let it rest. This will ensure a tender and juicy chicken breast.

Can I make this in the oven or stove top?

All my recipes can be replicated in the oven, stove top or gas grill. You do not need a big green egg or weber grill to replicate any of my recipes.

Chicken Philly Sliders

Ingredients 

  • 1 lbs Boneless chicken thighs
  • 1 pkg Kings Hawaiian slider loaf
  • 2 tbsp Beef seasoning
  • 1 Yellow onion
  • 1 Green bell pepper
  • 2 tbsp Mayo
  • 3 tbsp Unsalted butter
  • 1 tbsp Minced garlic

Instructions 

  • Season boneless chicken thighs with beef seasoning on all sides and let them sweat for a few minutes while the rub flavors penetrate through the chicken meat.
  • Set the grill to high direct heat at 450 degrees and place the seasoned chicken on the grill.  Flip every minute for a total of 10 minutes or until the meat reaches 175 degrees internal temp. 
  • Remove them off the grill and let them rest.
  • Dice up the veggies, season with the same beef seasoning as used on the chicken and throw it on a cast iron with some butter.  Sauté the veggies over high heat on the grill until they soften up but still have some crunch to them.
  • Remove the entire Kings Hawaiian slider loaf from its package and slice across, do not pull apart the separate buns. 
  • Apply a thin layer of mayonnaise and add a generous layer of chopped grilled chicken thighs followed by a layer of the sautéed veggies and provolone slices.
  • Set the grill to 350 degrees for indirect heat.  First place the open faced loaf on the grates allowing the cheese to soften and melt over the meat and veggies. 
  • Next, cover with the top slider loaf and brush melted butter and garlic mixture over the top.  Keep it on the grill for another 1-2 minutes and remove to serve.
