If you are looking to heat things up a bit then these Mango Habanero Wings are the answer.  The wings are perfectly grilled to a crispy skin and tender meat.   The smooth and sweet heat from the fruit and pepper gives a nice kick to an ordinary chicken wing. The best part, it’s not heavy and overpowering, allowing you to taste and enjoy the grilled flavors of the chicken.

Step 1: Simple prep work.

I always go with fresh detached chicken wing pieces which helps with time management. To start,  coat the raw wing pieces in olive oil and season them with Dad’s All Purpose rub.  With a nice mild BBQ flavor and few black pepper flakes, it’s the perfect poultry seasoning.  Make sure to get an even coat throughout.

Step 2: How to grill the perfect wings.

Heat up the grill to 375 degrees and set it for indirect heat. Place the seasoned wings directly on the grates and let them cook for 45-60 minutes or until the internal temperature reaches 180 degrees.  Flip the wings half way through to ensure an even cook throughout.

Step 3: How to make homemade mango habanero sauce.

Start off by slicing a habanero pepper off the core.  Toss the seeds.  Next, peal and slice 2 mangos.  Place both in a blender along with some freshly squeezed lime juice, honey, apple cider vinegar and Dad’s All Purpose rub.

  • When picking mango’s look for ones that are more ripe.  They are sweeter and juicier which will help enhance the flavor of the sauce.

Blend the ingredients together until the consistency is thick and smooth.  Give it a taste and see if you need to add more mango to lower the heat or another habanero pepper to spice it up even more.  This is where you get to play with the heat level.

Ingredients 

  • 2 lbs Detached chicken wings

  • 1 Habanero pepper
  • 1 Lime
  • 1/4 cup Honey
  • 2 tbsp Apple cider vinegar
  • 1 tsp Dad's All Purpose rub

Instructions 

  • Coat the raw chicken wing pieces in olive oil and season them with Dad's All Purpose rub. 
  • Heat up the grill to 375 degrees and set it for indirect heat.
  • Place the seasoned wings directly on the grates and let them cook for 45-60 minutes or until the internal temperature reaches 180 degrees.  Flip the wings half way through to ensure an even cook throughout. 
  • Remove off the grill and let them rest for 10 minutes.
  • For the sauce, start off by slicing a habanero pepper off the core.  Toss the seeds.  Peal and slice 2 mangos.  Place in a blender along with some freshly squeezed lime juice, honey, apple cider vinegar and Dad's All Purpose rub. Blend the ingredients together until the consistency is thick and smooth.  Taste and adjust heat level to your preference.
  • Toss the wings in the homemade mango habanero sauce and serve.
