  • Soy sauce: adds savoriness through it’s umami flavor balancing the sweet and spicy ingredients.
  • Hot sauce: I used Buffalo Hot sauce which adds a little kick and breaks up the sweetness of the sauce. Adjust heat levels to your liking.
  • Honey: adds natural sweetness and shine.
  • Brown Sugar: adds caramelization to the sauce when brushed on meats.
  • Rice Vinegar: creates a tangy balance to the sweetness from the brown sugar and honey.
  • Ginger: adds a zesty citrus aroma and a subtle underlying sweetness.

Prep the Party Ribs

These Fire Cracker Party Ribs are full of flavor, yet smoked in half the time regular ribs would be. The reason for this is the prep.

To start, pat dry a whole rack of baby back ribs.  Remove the membrane from the back of the ribs. Using a sharp knife, slice between each bone so every rib is separated.

Next, apply seasoning generously on all sides. I went with a combo of Dad’s All Purpose rub for the savory notes that compliment pork and Dad’s Sweet BBQ seasoning for the sweet notes.

Let the ribs rest at room temperature while the smoker or grill preheats.

Homemade Fire Cracker Sauce

The fire cracker sauce is where the magic happens.

It combines sweet honey, spicy hot sauce, brown sugar, ginger and soy sauce into one glossy coating that clings to every rib. The result is an addictive balance of sweet heat that’s bold without being overwhelming.

You can easily adjust the spice level by adding more or less hot sauce depending on your family’s preferences.

In a sauce pan, add honey, buffalo sauce, sriracha, soy sauce, rice vinegar, brown sugar, ginger, garlic powder and sprinkle in some crushed red pepper flakes.

Simmer on the store top or on the hot grill over until the sauce starts to thicken. Be sure to whisk it every few minutes to ensure nothing burns to the bottom. You want to make sure that all the ingredients are well incorporated together.

The benefit of these Fire Cracker Party Ribs is that they are grilled in 30 minutes!

Preheat the charcoal grill to high heat and set it up for dual zone grilling.  This means there needs to be a direct and indirect cooking option. 

Lay the ribs flat on the direct side keeping a space between each piece. Sear them, flipping them every minute to ensure an even crust throughout. They should cook about 80% of the way.

Next, move them to the indirect side and dunk them or brush over the ribs with the homemade Fire Cracker Sauce. Grill these ribs until they reach an internal temp of 200 degrees.  Remove and enjoy!

Fire Cracker Party Ribs

These Fire Cracker Party Ribs are sweet, sticky, and perfectly spicy. Coated in a bold firecracker glaze, they're the ultimate BBQ recipe.

Ingredients 

Rib Ingredients

  • 2 racks Baby back ribs
  • 2 tbsp All purpose seasoning
  • 2 tbsp Sweet BBQ seasoning

Fire Cracker Sauce Ingredients

  • 1/2 cup Honey
  • 1/2 cup Buffalo sauce
  • 2 tbsp Sriracha
  • 1 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 tbsp Brown sugar
  • 1 tsp Garlic powder
  • 1/2 tsp Minced ginger
  • 1/2 tsp Crushed red pepper chili flakes

Instructions 

  • Remove the ribs from the packaging and pat them dry.
  • Remove the membrane and cut between each bone to make individual ribs.
  • Generously season the ribs with All Purpose and Sweet BBQ seasonings.
  • In a sauce pan, combine all the sauce ingredients and simmer over low heat for 15 minutes.
  • Set up the grill for dual zone grilling and preheat to 400 degrees.
  • Place the ribs over direct side first.
  • Sear them, flipping them every minute to ensure an even crust throughout.
  • Next, move them to the indirect side and brush them with the fire cracker sauce. 
  • Continue cooking until they reach an internal temp of 195-200 degrees. 
  • Remove them from the grill, rest 10 minutes and pour the remaining fire cracker sauce over the finished ribs. Enjoy!

Don’t overcrowd the grill — give ribs space to caramelize.
Let ribs rest 10 minutes before serving.
Adjust heat or sweetness levels of the sauce to your liking.
