- 1/2 Yellow Onion – diced
- 1 Jalapeno – diced
- 1 lb Ground beef
- 1 tbsp Dad's All Purpose Seasoning
- 1 tbsp Cajun seasoning
- 2 tbsp Tomato paste
- 1 tbsp Minced garlic
- 2 cups Chicken broth – low or reduced sodium
- 2 cups Beef broth – low or reduced sodium
- 2 tbsp W Sauce
- 2 cups Cubed Yukon gold potatoes
- 15 oz White beans – drained
- 12 oz Fire roasted corn kernels
- 12 oz Frozen peas and carrots
Instructions
- Add the olive oil, onion and jalapeno to a Dutch oven or a large pot. Sauté over medium heat until the onion is translucent in color.
- Add in the ground beef, break it apart and brow. Add seasonings and mix.
- Make space in the middle of the dutch oven and add in the tomato paste and minced garlic. Mix everything together and cook for 2-3 minutes.
- Add in the broths, W sauce, diced potatoes and and bring to a boil. Cover and cook until the potatoes are fork tender.
- Once the potatoes are cooked, add the drained beans, peas and carrots, and corn. Mix and taste. Add more seasoning, salt or heat to make it perfect for you.
- Simmer for 5 more minutes and serve. Enjoy!
