Step 1: Mix the ingredients.
For this recipe I went with peaches as my fruit selection and I’m so happy I did! They worked so well with the batter and dressing olive oil on top.
To start, drain the peaches. Yes, I used canned fruit. If you are a baker, feel free to soften your own fruit. Place them in a bowl along with some freshly squeezed lemon juice, lemon zest and sugar. Mix it all together and pour into a heat safe baking dish.
Next, in a mixing bowl add all purpose flour, sugar, cinnamon, baking powder, salt and milk. Mix the ingredients together until you the batter is smooth. Pour it over the peaches and it’s ready to be baked or grilled.

Step 2: How to make the best grilled peach cobbler.
Preheat the grill to 350 degrees and set for indirect heat. Place the fully loaded baking dish on the grill and bake for 30-45 minutes or until the top is golden brown.
Serve with some vanilla ice cream and drizzle with finishing olive oil on top. Trust me, the savoriness of the olive oil breaks up the sweetness of the grilled peach cobbler making for one tasty desert. Enjoy!
