If you are looking for a flavorful homemade chicken sandwich then you have to try this recipe. It’s sweet, fiery, zesty and savory all in one. With the grilled spatchcock chicken, the smokiness added another layer of flavor taking this Jerk Chicken sandwich to a whole other level!

Step 1: How to spatchcock a chicken.
To start, cut out the backbone from the chicken with sheers or a sharp knife. This process of spatchcocking or butterflying will allow the chicken to cook more evenly and quickly. Press down hard on the breast bone to break it so the chicken will lay nice and flat.
To prep the marinade, in a mixing bowl add orange juice, soy sauce, white vinegar, freshly squeezed lime juice and Jamaican Jerk seasoning by Spice House. The spice is a great coarse blend packed with amazing herbs and spices.
Place your spatchcocked chicken on a baking sheet and pour the amazingly flavorful marinade all over the bird on both sides.
After the chicken has marinated for an hour, it’s time to get in on the grill. Set it for indirect cooking and the temp at 375 degrees. Place the chicken skin side up still on the baking sheet and grill until the breast registers an internal temperature of 165 degrees. Occasionally baste the chicken with some of the fallen off marinade. Total cook time should take approximately 45 minutes, depending on the size of your chicken.
When the chicken is fully cooked, remove it from the grill and let it rest for 10-15 minutes. This is a very important step in this process. During the rest period, the chicken will start to cool down and the cooking process will stop. The juices will redistribute inside the meat, giving you a much better final product.

Step 2: How to make a homemade jerk sauce.
The secret to this recipe is in the Jerk sauce. The punch of flavor over the already flavorful and tender chicken guarantees your Jerk Chicken sandwich will not be dry or bland.
Similar to the marinade, in a sauce pan, add orange juice, soy sauce, white vinegar, freshly squeezed lime juice, brown sugar and more Jamaican Jerk seasoning by Spice House. Simmer over low heat until the sauce thickens.
Step 3: Time to assemble the Jerk Chicken Sandwich.
Now that the chicken has rested and sauce is made, it’s time to pickle some red cabbage. Slice up some red cabbage and place into a bowl. Add apple cider vinegar and sugar and let it sit for 30 minutes to an hour.
Time to assemble the Jerk Chicken sandwich. Start by shredding the grilled spatchcock chicken. Pour some of the jerk sauce into the meat and mix it together. For the breading I used brioche buns. Start with a hefty handful of the shredded jerk chicken, pour more jerk sauce over, top with pickled red cabbage and enjoy!
