To start, cut out the backbone from the chicken with sheers or a sharp knife. Press down hard on the breast bone to break it so the chicken will lay nice and flat.
To prep the marinade, in a mixing bowl add orange juice, soy sauce, whit vinegar, freshly squeezed lime juice and jerk seasoning.
Place your spatchcocked chicken on a baking dish and pour the amazingly flavorful marinade all over the bird on both sides.
Set it for indirect cooking and the temp at 375degrees. Place the chicken skin side up still on the baking sheet and grill until the breast registers an internal temperature of 165 degrees. This should take approximately 45 minutes, depending on the size of your chicken.
For the jerk sauce, in a sauce pan, add orange juice, soy sauce, white vinegar, freshly squeezed lime juice, brown sugar and more jerk seasoning. Simmer over low heat until the sauce thickens.
To prepare the red cabbage slaw, slice up some red cabbage and place into a bowl. Add some apple cider vinegar and sugar and let it sit.
In a mixing bowl, shred the grilled spatchcock chicken and pour some of the jerk sauce into the meat and mix it together. For the breadingI used brioche buns. Start with a hefty handful of the shredded jerk chicken, pour more jerk sauce over, top with pickled red cabbage.
