The delicious taste of a rotisserie chicken, savoriness from the melted cheeses, kick from the hot sauce ranch mix and smokiness from the charcoal make this recipe a ultimate crowd pleaser.   This smoked buffalo chicken dip is super easy to make with a few shortcuts along the way to make the process even faster.

Step 1: Ways to prepare chicken.

The beauty about this dish aside from it tasting amazing are the shortcuts you can take depending how much or little you want to prepare in advance.

Chicken options include a store bought chicken, homemade rotisserie, grilled chicken breast or spatchcock.  No matter the method, this dip will be a hit.  

For a purchased precooked rotisserie chicken, which is what I did for this recipe, shred all the meat off the chicken, including the flavorful skin, and place it into a casserole dish.

Once you have your chicken cooked, shredded and in the casserole dish, add in the hot sauce, ranch dressing and ranch seasoning.

Step 2: Let’s get cheesy

To make this smoked dip super cheesy and gooey, a good variety of cheeses is recommended. Add an entire block of cream cheese and sour cream which will help give it a creamy texture.  Next add in shredded cheddar and mozzarella cheese.  You can shred off the block or use pre-shredded store bought bags.  I used a mix of both.

Step 3: How to smoke a Buffalo Chicken Dip.

Pre-heat the grill to 350 degrees and set for indirect heat.  Halfway through the cook, mix in the melting cheese with all the ingredients. Total cook time is 15-20 minutes.

Remove the Smoked Buffalo Chicken Dip off the grill, drizzle some more hot sauce, ranch dressing and green onions and go right for the first dip. Enjoy!

Ingredients 

  • 2 cups Shredded chicken
  • 1 cup Shredded cheddar
  • 1 cup Shredded mozzarella
  • 1/2 cup Hot sauce
  • 1/2 cup Ranch dressing
  • 1/4 cup Sour cream
  • 8 oz Cream cheese
  • 1 tbsp Ranch seasoning

Instructions 

  • Shred 2 cups of meat off the chicken, including the flavorful skin, and place it into a casserole dish. 
  • Pour in the hot sauce, ranch dressing and ranch seasoning.

  1. Any thoughts on smoking the chicken before hand? Would it be too much smoke with the buffalo sauce flavor?

    This is such an easy but crowd pleasing recipe! Comes together quick and the ingredient list is minimal which is great when you are in a hurry. I like to add some garlic as well.
