One Pan Meals.
One pan or sheet meals are the perfect meal solutions for busy families. Throw all your ingredients together, season and roast or grill away. The juices of the protein mix with the flavors of the veggies, making for the perfect cohesive dinner.
It’s a great way to use up food in the fridge. Use whatever veggies you have, chop them up into bite size pieces and add in a meat of choice. Beef, chicken or pork, make an easy and delicious one pan meal every day.
Ingredient List for a One Pan Chicken Dinner.
- Chicken: For this recipe I used a whole chicken. Spatchcock the bird to lay flat over the veggies releasing all the flavors directly onto them during the cooking process.
- Potatoes: I used small red potatoes. Quarter into smaller bite size pieces to cook faster and eat easier.
- Root Veggies: Seasonal veggies are best for this recipe. I used carrots and butternut squash for color and flavor.
- Seasoning: I used a mix of an herb seasoning for the veggies and an all purpose rub for the chicken.
Prepare the veggies first.
For a One Pan Chicken Dinner, use any veggies that you have in your fridge or what your family likes most. I used petite red potatoes, carrots and butternut squash. Cube up the veggies into bite size pieces and toss them into a large bowl. Add olive oil, minced garlic and Dad’s Steak seasoning. It’s the perfect blend of buttery, herby flavors that works perfectly on veggies.
Mix it all together making sure all the veggies are covered. Transfer the seasoned veggies into a cast iron skillet or rimmed sheet pan.
Recipe Tip
Starchy veggies are ideal for this recipe. However, cauliflower, asparagus and onion work just as well.
How to spatchcock a chicken
Next, it’s time to prepare the chicken. For best results, I recommend spatchcocking the bird. This method is ideal when making a one pan meal. The chicken will cook more evenly and quickly. And the best part, all the fat that renders out from the chicken will be absorbed by the veggies below! I’m telling you, it’s the best way to cook them!
To start, cut out the backbone from the chicken with sheers or a sharp knife. Press down hard on the breast bone to break it so the chicken will lay nice and flat. I like to use a little olive oil or cooking spray for the binder. This will allow the seasoning to stick better to the chicken. Cover the outside generously with your choice of all purpose seasoning and pat it in.
Set the seasoned chicken on top of the veggies and this one pan chicken dinner is ready for the grill or oven.

How to grill the perfect one pan chicken dinner
Preheat the grill to 350 degrees and set for indirect heat. Place the fully loaded cast iron skillet on the grill and cook for about 1 hour or until the internal temperature reaches 160 degrees. During the grilling process, the juices from the chicken will cover the veggies underneath adding additional savory flavors that will make this dish out of this world.
Once the internal temperature of the chicken reaches 16 degrees, remove it from the grill and let it rest. Yes, the safe eating temperature for poultry is 165 degrees and I pulled this off the grill at 160. Don’t worry, the chicken will continue to cook when it’s resting and the temperature will climb to 165 degrees. TRUST ME. Both the chicken and veggies will be full of delicious flavors, tender and juicy! Enjoy!

One Pan Chicken Dinner
Ingredients
- 1 Whole chicken
- 2 tbsp Olive oil
- 3 tbsp All purpose seasoning
- 1 tbsp Garlic and herb seasoning
- 5 Potatoes
- 2 Large carrots
- 1 Yellow onion
- 1/2 Butternut squash
- 1 tbsp Minced garlic
Instructions
- Cube up the veggies into bite size pieces and toss them into a large bowl. Add half the olive oil, minced garlic and garlic and herb seasoning. Mix it all together making sure all the veggie cubes are covered.
- Transfer the seasoned veggies into a cast iron skillet or rimmed sheet pan.
- For the chicken, cut out the backbone from the chicken with sheers or a sharp knife. Press down hard on the breast bone to break it so the chicken will lay nice and flat.
- Coast the chicken with the remaining olive oil and season generously with an all purpose seasoning
- Set the seasoned chicken on top of the veggies and get the grill ready.
- Preheat the grill to 350 degrees and set for indirect heat.
- Place the fully loaded cast iron skillet on the grill and cook for approximately 1 hour.
- Once the internal temperature of the chicken reaches 160 degrees, remove it off the grill and let it rest for 10 minutes. Carve, serve and enjoy!
