Check out this grilled flatiron steak recipe! The tenderness of the meat packed with the amazing chipotle adobo marinade is one to try! If you are not familiar with this cut, it’s a cross between a filet mignon and a NY strip. It is cut from the top blade and is extremely tender and well-well marbled. The chipotle marinade adds hints of smokiness while the citrus fruits add zestiness that creates a flavor worthy of trying.
How to make the chipotle marinade.
The tenderness of the flatiron steak allows for marinades to penetrate the cut and add some amazing flavors to this dish. For the marinade, I decided to go down the southwest route. In a blender, add chipotle peppers in adobe sauce, freshly squeezed orange and lime juice, minced garlic, crushed red peppers, mexican oregano, cumin, fresh cilantro, salt and olive oil. Blend all these ingredients together until you get a smooth orange liquid.
Pour in over the flatiron steak, making sure to coat the entire cut and let it marinade in the fridge for 2-3 hours.
How to grill the perfect flatiron steak.
Start off by heating up the grill to 450 degrees. You want the grill to be at a high temperature to get the perfect cook and sear on your steak.
Place the marinared steak directly on the grates for direct heat cooking. Flip the steak every 2 minutes for a total of 10-15 minute cook time. The frequent flipping cooks the steak evenly and creates a better crust. It is also very important to not overcook the meat. This is a cut that gets tough really easily so it’s best to leave medium rare to medium for ideal cook.
Finally, set aside the grilled flatiron steak for 10 minutes to rest. It’s very important to rest any protein after a cook. This process helps redistribute all those wonderful juices that will create a beautifully tender slice of meat. Enjoy!

Ingredients
- 3 lbs Flatiron steak
- 7 oz Chipotle pepper in adobe sauce
- 1 tbsp Crushed red pepper flakes
- 1 tbsp Mexican oregano
- 1 tbsp Cumin
- 1 tbsp Minced garlic
- 1 tbsp Salt
- 1/4 cup Olive oil
- 1/4 cup Fresh cilantro
- 2 Lime - freshly squeezed juice
- 1 Orange - freshly squeezed juice
