There are a few party foods that you know will disappear soon after they are served.  Jalapeno poppers are close to the top of that list.  The spiciness from the pepper, the creaminess of the filling and saltiness of the bacon is the perfect combination to one of the greatest bites. Let me show you how to make these perfectly smoked jalapeno poppers that will get any party started!

3 simple steps to make the perfect Jalapeno Popper.

This is truly one of the simplest recipes I make.  It is a crowd pleaser every time and forget about leftovers.

First, you’ll need to slice the jalapeno peppers in half along the elongated side of the vegetable.  Make sure to cut off the stem as well.

Next, remove all the seeds.  This will help reduce the heat as well as make space for the filling.

Now for the filling.  I just made things easier for you.  How you ask?  Well, while most people use cream cheese and mix in shredder cheddar and add spices, all you need to do is purchase your favorite dip.  It has all the ingredients pre-mixed.  For this recipe, I went with a spinach dip, but I’ve done spinach artichoke, jalapano cheddar, spinach and parmesan and the list goes on.  They are all great, it all depends on what I’m craving that day.

Once the jalapeno boats are filled, all that’ remains is the bacon.  Take 1 strip and wrap it around the jalapeno.  Wrap it well enough to cover the filling, but not too tight.  The bacon strip shrinks as it cooks.

For some extra flavor, I seasoned the fully wrapped poppers with a sweet BBQ rub. For this recipe I used Hardcore Carnivore Sweet rub. It brings an extra taste of BBQ sweetness with a hit of smokiness to this recipe that is a game changer.

Smoking Jalapeno Poppers.

Heat up the grill to 375 degrees.  Evenly distribute the bacon wrapped jalapeno poppers on the grill on indirect heat.  For those using a propane gas grill, set the burners on one side of the grill and place the wire rack on the other side.  This creates the same indirect application.

Let these smoke for about 30-45 minutes or until the bacon is nice and crispy.

Once the smoked jalapeno poppers are done, remove off the grill, serve and make sure you grab one to enjoy!

Smoked Jalapeno Poppers

Ingredients 

  • 8 Jalapenos
  • 8 Strips of bacon
  • 16 oz Spinach dip – or your choice of dip
  • 1/4 cup Sweet BBQ rub

Instructions 

  • Slice the jalapeno peppers in half along the elongated side of the vegetable. Make sure to cut off the stem as well.
  • Remove all the seeds. 
  • Fill each jalapeno half with a spoon full of your dip of choice.
  • Take1 strip and wrap in around the jalapeno.  Wrap is well enough that if covers the filling, but not too tight.  The bacon strip shrinks as it cooks.
  • Heat up the grill to 350 degrees, and set the grill up on indirect heat
  • Let these smoke for about 20 minutes or until the bacon is nice and crispy.
