Summer is in full swing which means grilling season is here! There is nothing better than a great tasting side to go with grilled protein. This balsamic tomato salad is my new go to. I first tried this dish in Florida at Pollo Tropical on our family spring break and just had to have it again. Since the fast food chain is not available in the Chicagoland area, I decided to make my version from scratch. It’s quick and easy to make and gets better with time as it marinates in the liquids.
You only need a few ingredients to get started. For fresh ingredients, all you need are tomatoes and red onion. Additionally, you’ll need a little bit of brown sugar, salt, pepper, balsamic vinegar and olive oil.
Start off with cutting the tomatoes into bite size chunks and slice half a red onion. Next top with the brown sugar and add in all the spices and liquids. Mix it all together and you are done!!! Pretty simple right?
For the best taste, let the balsamic tomato salad sit for a few hours marinating in the balsamic vinegar before serving, trust me!
Serve with some grilled chicken and enjoy!

Balsamic Tomato Salad
Ingredients
- 4 Roma Tomatoes
- 1/2 Red Onion
- 1 tbsp Brown Sugar
- 1 tbsp Salt and Pepper
- 1/4 cup Balsamic Vinegar
