Lately, I’ve been testing a few salmon marinates and this recipe is by far the best!  I tried all types of flavor profiles and ingredients and learned the simpler the better.  Salmon is a very flavorful and fatty fish.  All it needs a little spruce of sweetness to balance the rich taste.  These grilled salmon bites are full of wonderful asian BBQ flavors that make for the perfect appetizer, snack or in my case, perfect size for the kids. Here is how to make this easy recipe with just a few ingredients.

Prep the salmon bites

First you need to get the salmon cubes ready.  I recommend purchasing a center cut salmon with the skin already removed.  This will save you some time.

Start by cutting up the salmon filets into smaller, even sized cubes.  Because of the center cut filet, you should not have much issue with the even thickness.

Next, place the cubed salmon bites into a mixing bowl and pour in most of the Bachan’s Japanese Barbecue Sauce, add in some rice vinegar and brown sugar.  Mix together all the ingredients by folding the fish cubes into the sauce.

Recipe Tip

If you want some heat, add a few jalapeno slices into the marinade or use a spicier Bachan’s sauce.

Set these aside for at least an hour or more, depending on your preference, and let the salmon cubes marinate in the sauce.

Grilling Salmon Bites.

Heat up the grill to 400 degrees.  Evenly distribute the marinated salmon bites onto a wire rack and place on the grill on indirect heat.  For those using a propane gas grill, set the burners on one side of the grill and place the wire rack on the other side.  This creates the same indirect application.

Once the grilled salmon bites reach 140 degrees internal temperature, take them off the grill.  The total cooking process should take about 10 minutes.

Sprinkle with some toasted sesame seeds and parsley and enjoy!

Grilled Salmon Bites

Ingredients 

  • 2 lbs Center cut salmon
  • 16 oz Bachan's BBQ sauce
  • 1 tbsp Rice vinegar
  • 1/4 cup Brown sugar

Instructions 

  • Start by cutting up the salmon filets into even sized cubes.
  • Place the cubed salmon bites into a mixing bowl and pour in most of the Bachan's sauce, rice vinegar and brown sugar.
  • Mix together all the ingredients by folding the fish cubes into the sauce.
  • Set these aside for at least an hour or more, depending on your preference, and let the salmon cubes marinate in the sauce.
  • Heat up the grill to 400 degrees.

    Made this recipe today using my Weber E6 Summit Kamado Grill. Marinated 2lbs of cubed skinless Salmon from Aldi’s for 4 hours following Maciek’s recipe. Grilled them for 10 minutes @ 400-450 degrees indirectly. This is one of the tastiest ways I’ve enjoyed grilled salmon. My go to salmon recipe going forward.

    Admittedly I haven’t done the salmon bites yet but I use this marinade every time I make Salmon and it’s our favorite! Definitely want to try the salmon bites soon because they look awesome
