Who doesn’t love tater tots!  That little crunchy golden potato bite is the perfect side dish to any meal. Load them up with delicious toppings and transform a simple ingredient into an amazing snack!  For this recipe, I grilled up some chicken thighs and made loaded tater tots with homemade BBQ sauce.  I loved this recipe so much, I almost ate the entire thing by myself…

Grill up the chicken thighs

First thing’s first, need to grill the chicken.  I used boneless chicken thighs which are a little fattier cut of meat than a chicken breast.  They cook quickly and are easy to cut up into smaller bite size cubes.  As you season the thighs, make sure to cover all sides.

Preheat the grill to 400 degrees direct heat and grill the seasoned chicken on high heat for about 20 minutes or until the chicken reaches 160 degrees internal temperature.

Remove them off the grill and let them rest for about 5 – 10 minutes or until they reach 165 degrees.  Dice up the chicken thighs and set aside.

While the chicken is on the grill, cook the frozen tater tots in the air fryer or oven.  Make sure they get a crunchy golden outer layer.

How to make homemade BBQ sauce

Homemade BBQ sauce is very simple to make.  You only need a few ingredients which are usually household staples.  I made mine slightly different by using Sparkling Ice Berry Lemonade. It is a fruity, flavorful sparkling water made with zero sugar that adds some color and sweetness to the sauce.  I use Sparkling Ice waters in all my sauces.

In a sauce pan, add the Sparkling Ice Berry Lemonade, brown sugar, ketchup, hot sauce, Worcestershire sauce and BBQ seasoning.  Mix all the ingredients together until the sauce starts to boil.  Remove it from the heat and set aside.

Loaded tater tots assembly time!

In a cast iron skillet, add the cooked tater tots for the first layer.  Followed by a generous layer of shredded cheddar cheese, diced grilled chicken and finish off with another layer of cheese.  Next top with plenty of the homemade sauce and place back on the grill for about 5 minutes until the cheese is nicely melted all over the chicken and taters.

For the finale, add some chopped red onion, tomatoes, cilantro and sliced jalapeños.

Time to dig into those gooey loaded tater tots with the tangy homemade BBQ sauce, tender grilled chicken thighs and freshly chopped veggies!!

Ingredients 

Chicken Thigh Ingredients

  • 1 lbs Boneless Chicken Thighs
  • 2 tbsp BBQ seasoning

Homemade BBQ Sauce Ingredients

  • 1/4 cup Sparkling Ice Berry Lemonade
  • 1/4 cup Brown Sugar
  • 1/4 cup Ketchup
  • 2 tbsp Hot Sauce
  • 2 tbsp Worcestershire Sauce
  • 1 tbsp BBQ seasoning

Loaded Tater Tot toppings

  • 32 oz Bag of Frozen Tater Tots
  • 2 cups Shredded Cheddar Cheese
  • 1/2 Red Onion
  • 3 Roma Tomatoes
  • 1/2 Batch of Fresh Cilantro
  • 3 Jalapenos

Instructions

Homemade Sauce

Assemble Loaded Tater Tots

  • Ina cast iron skillet, add the cooked tater tots for the first layer. Followed by a generous layer of shredded cheddar cheese, diced grilled chicken and finish off with another layer of cheese.  Next top with plenty of the homemade sauce and place back on the grill for about 5 minutes until the cheese is nicely melted all over the chicken and taters.
  • Top it all off with some chopped red onion, tomatoes, cilantro and sliced jalapeños.
