Talk about the perfect summer recipe. These grilled pineapple chicken skewers are perfect hot summer days. They are easy to make and come out delicious.
For this recipe I used boneless skinless chicken breast, but you can use any cut of chicken you’d like. For an extra kick of flavor, I also made an easy glaze using Sparkling Ice Cherry Limeade. It’s a great way of adding some flavor without making it too sweet.
Start by cubing up your chicken. It’s important to get the pieces roughly the same size so the chicken will cook evenly. Season the chicken with your favorite bbq rub or use my standard mix below.
- 1 tbsp kosher salt⠀
- 1 tbsp pepper⠀
- 1 tbsp paprika⠀
- 1 tsp onion powder⠀
- 1 tsp garlic powder⠀
- 1 tsp chili powder⠀
- 1/2 tsp cayenne⠀
Next, cut up the bell peppers, the pineapple and skewer everything with the chicken. The skewers then hit the grill, over direct medium-high heat, about 350-400 degrees.
While the skewers are cooking, we can prep the glaze.
- 1/4 cup Sparkling Ice Cherry Limeade
- 2 tbsp soy sauce⠀
- 1 tbsp red wine vinegar⠀
- 1 tbsp Worcestershire sauce⠀
- 2 tbsp brown sugar⠀
- 1 tbsp seasoning mix⠀⠀
Mix all ingredients in a small sauce pan and simmer over low heat for 10-15 minutes.
Brush the glaze on the skewers on all sides and continue cooking until the chicken reaches 165 degrees internal temperature. The glaze should start to caramelize on the outside and create a delicious crust on the chicken and veggies. Pull from the grill, rest 10 minutes and serve.
