Let’s make some smoked pork belly burnt ends with Sparkling Ice for our holiday weekend bbq. I love using Sparkling Ice as a spritz when smoking meats. Not only does it help the meat smoke and not dry out, but it gives it great extra flavor. Throw any sprayer on a bottle and you have a great spritz. ⠀
This is a very simple recipe for one of the most indulgent bites of bbq. Pork belly burnt ends are smokey, porky, fatty and just melt in your mouth. They are a great addition to any backyard bbq.
Starting with a skinless piece of pork belly, cut it up into 1 inch by 1 inch cubes. For the seasoning mix, I used the following:⠀

– 1 tbsp kosher salt⠀
– 1 tbsp pepper⠀
– 1 tbsp paprika⠀
– 1 tsp onion powder⠀
– 1 tsp garlic powder⠀
– 1 tsp chili powder⠀
– 1/2 tsp cayenne⠀
⠀
Make sure the pork belly cubes are coated on all sides and put them on the grill, at 275 degrees, indirect heat. Spritz them every 30-45 minutes with Sparkling Ice Grape Raspberry.⠀

Whiles these are cooking, prep the sauce:⠀
⠀
– 1/4 cup Sparkling Ice Grape Raspberry⠀
– 1/4 cup ketchup⠀
– 1 tbsp hot sauce⠀
– 1/4 cup honey⠀
– 1 tbsp Worcestershire sauce⠀
– 2 tbsp apple cider vinegar⠀
– 1 tbsp seasoning mix⠀
⠀
Mix and simmer over low heat for about 15 minutes. ⠀

After, 3 hours on the grill, put the pork belly cubes in a foil pan, cover with the sauce, add a few pats of butter and drizzle with honey. Place the pan on the grill and cook an additional 45 minutes or so. Be sure to rest them 15-20 minutes because they will be HOT!⠀

While they are resting, let’s make a quick drink. 2 oz vodka, ice, and top it all off with Sparkling Ice Classic Lemonade. Top with a lemon garnish and enjoy with the pork belly!⠀

And they turned out delicious! Sweet, smokey, super tender, like little pillows of porky goodness. These are a crowd favorite around my house. Give them a try and let me know what you think.
