This chorizo burger recipe is out of this world!  The mix of the spicy chorizo and the fatty beef is a great combo. All topped with some Mexican cheese and guacamole, this burger was like no other. All the savory Mexican flavors in a burger, this is a must try.  Let me show you how.

Step 1: Prepare the chorizo patties

For this recipe, I used 12oz. of ground beef and 6oz. of Chorizo.  Any more of the chorizo and you risk the grilled patties to be dry and crumbly.  For the beef, I recommend an 80/20 blend.

Mix the 2 protein together and separate into 1/4lb. sections. Form the patty into a round and flat shape.  You can use a burger press or shape them by hand.  Season both sides with Dad’s Taco seasoning to give the meat an extra boost of flavor. This seasoning has the perfect blend of cumin, salt and lime juice.

Place the patties into the fridge for 30 minutes to help the patty firm up and hold its shape while on the grill.

Step 2: Quick and easy guacamole

Instead of making a traditional guacamole or use salsa for the chorizo burger, I made a quick and easy version using only 3 ingredients. This avocado mash is the perfect creamy balance to the savory chorizo patty.

In a bowl, add 2 avocado’s, fire roasted tomatoes, freshly squeezed lime juice, Dad’s Taco seasoning and a pinch of salt. Mash and mix the ingredients together and set aside.

Adjust seasoning and salt levels to your liking.

Recipe Tip

For this recipe, I did use canned fire roasted tomatoes for convenience, but if you can and have the time, freshly roasted are always the best. Just place a roma tomato directly on the coals and char all sides.

Step 3: Grill your chorizo burger

Preheat the grill to 400 degrees and set it for dual zone cooking. This means you have both an indirect and direct side.

Place the firmed up chorizo and beef patties on the direct side first and grill 3 minutes per side and move them to the indirect side. Add some chihuahua cheese over the patties and continue cooking until the internal temperature reaches 140-145 degrees.

Remove them off the grill and let them rest for 5 minutes.

Finally assembly time! On the bottom toasted bun, add fresh lettuce for some crunch, next add the chorizo patty, a heaping scoop of the guacamole and close.

After the first bite into this chorizo burger, your mouth will be exploding with savory flavors from the meat and creaminess of the avocado that all work cohesively together into this inspired Mexican flavored dish.  Like i said, this did not disappoint! Enjoy!
