Looking for a healthier burger option that does not lack in flavor and texture? Then you need to try these Thai inspired chicken burgers. It’s Pad Thai between 2 burger buns. Creamy, crunchy and savory, this is the perfect lunch of dinner option all year round.

Step 1: Prepare the chicken patties.
For this recipe, I used ground chicken. Another option would be to use either chicken thighs or breast if you prefer a larger cut of meat.
In a mixing bowl, add the ground chicken, Dad’s All Purpose rub, Thai seasoning paste, minced garlic, freshly squeezed lime juice and chopped green onions. Mix the ingredients together by hand, making sure to evenly blend the flavors together. Since I used 1 pound of chicken, divide the meat mixture into 4 equal parts and shape 1/4 lb flat chicken patties.
Place them in the freezer for 1 hour to firm up. This will help the patty keep its shape once on the grill.
Recipe Tip
- Chopped cilantro is another great ingredient for the patties. It will give an extra boost of flavor that ground chicken desperately needs.
- Because chicken is such a lean meat, it might be worth while to add in some fat to make it juicier. Bacon fat or a 1/4 pound of ground pork will do the trick

Step 2: Prepare the peanut butter sauce.
The red cabbage slaw is where a lot of the Thai ingredients come in. In a mixing bowl, add creamy peanut butter, fish sauce, soy sauce, sriracha, freshly squeezed lime juice, white vinegar, and sugar. Mix the ingredients together until the sauce is perfectly blended.
Remove about 2 tablespoons of the sauce into another small dish and place to the side. You will need it later for your burger.
Drop in the shredded red cabbage and mix it all together making sure to cover all pieces.
Step 3: Grill the Thai inspired Chicken Burgers.
I used my new Weber kettle grill for this recipe. But any grill will work, gas, charcoal or flat top.
Preheat the grill to 375 degrees and set for direct heat. Place the firmed up chicken patties on the grates and grill for 20 minutes or until the internal temperature reaches 160 degrees. Make sure to flip them halfway through to get an even cook throughout.
Remove the grilled chicken patties and let them rest for 10 minutes. This will bring the temp up to the required 165 degrees and redistribute the juices through the patty.
Toast up the burger buns and you are ready to assemble the Thai inspired chicken burgers. Start with spreading some of the peanut butter sauce you set aside. Next, add the perfectly grilled chicken patty followed by some thinly sliced cucumbers and a heaping amount of the peanut butter slaw. Cover with the top bun and enjoy!
Grilled Chicken Tip
- Sear the chicken patties over direct heat for an internal temperature of 160 degrees.
- Make sure to rest the grilled chicken for 10 minutes.

The most important step in having juicy patties is the internal temperature. By removing chicken patties at 160 degrees and letting it rest for 10 minutes this will not only trap and redistribute the juices throughout the meat but bring it up to safe to eat temperature of 165 degrees.
Chicken is a very bland protein. Do not be scared to experiment with flavor and use more seasonings. Use strong flavors like garlic, ginger and soy. When seasoning the ground chicken, add 1 tbsp of seasoning per pound.
