 Let’s be real, no one can afford fancy steaks for dinner every night.  But we still need to eat and there are a lot of great, delicious and budget friendly recipes to make without breaking the bank. With 3 simple ingredients and a few household staples, you can make an affordable dinner for 4 and still have leftovers for lunch the next day.  This roasted pork tenderloin dinner is the perfect solution for any weeknight.

Step 1: Start with the side dishes.

No dinner is complete without the sides.  Use vegetables that are in season.  They are cheaper and fresher. For this recipe, I went with simple carrots and red potatoes.  

Quarter the potatoes, toss in olive oil and season with Dad’s Steak seasoning.  If you don’t have it, a simple salt, pepper, garlic powder and Italian seasoning will do. Place the seasoned potatoes on a veggie tray.

For the carrots, cut off the stems, peel and toss in olive oil.  No seasoning needed.  A simple glaze will add a ton of flavor to these carrots. 

I used what I had in the pantry for the glaze.  Some soy sauce, Worcestershire sauce and brown sugar.  Mix the ingredients together and set aside. 

Preheat the grill to 375 degrees and set for direct heat. First, place the veggies over direct heat and roast for 20 minutes.  After that, rise them to them to the indirect side and let them grill until they soften.

Roasted carrots

Just before removing the carrots, brush them with the glaze and leave them on for another 2 minutes allowing it to caramelize over the veggies.

Recipe Tip

  • Get or use an expander for this cook.  This allows you to first roast your food directly above the fire and them move it to a higher grate for slow cooking until soft avoiding burnt food.

Step 2: How to perfectly grill pork tenderloin.

My local grocery store had a deal on pork tenderloin, so I decided to sock up.  Can’t pass a buy one get one free opportunity!

Each package had 2 tenderloins, so I used one package and froze the other one for another day.

Cover the pork with olive oil and season with Dad’s Steak seasoning. The rosemary and garlic flavors are perfect for this cut.  However, if you don’t have it, simple seasonings used on the potatoes will work as well.

Place the tenderloins on the grill on the direct side at 375 degrees. Let them roast over the fire for 10 minutes flipping them halfway through.  Remove once the internal temperature reaches 140 degrees.  Cover with foil and let them rest for 10 minutes.  This process will help redistribute the juices and keep the loin nice and tender. 

To best enjoy this roasted pork tenderloin dinner, slice the pork, serve with the roasted potatoes and carrots and pour the juices from the meat over the top.  Enjoy!

Roasted Pork Tenderloin Dinner

Ingredients 

  • 2 Pork tenderloins
  • 6 Red potatoes
  • 2.5 tbsp Dad's steak seasoning
  • 2 batches Carrots
  • 2 tbsp Olive oil
  • 1/4 cup Soy sauce
  • 2 tbsp Worcestershire sauce
  • 1 tbsp Brown sugar

Instructions 

  • Quarter the potatoes, toss in olive oil and season with 1/2 tbsp Dad's steak seasoning. Place the seasoned potatoes on a veggie tray.
  • For the carrots, cut off the stems, peel and toss in olive oil. 
  • For the glaze, in a mixing bowl add soy sauce, Worcestershire sauce and brown sugar.  Mix the ingredients together and set aside. 
  • Preheat the grill to 375 degrees and set for direct heat. Use an expander for this cook.  This is a grill accessory that has 2 grate levels. First, place the veggies on the lower grates and roast for 20 minutes.  After that, rise them to the upper level and let them grill until they soften.
  • Just before removing the carrots, brush them with the glaze and leave them on for another 2 minutes allowing it to caramelize over the veggies.
  • Cover the pork with olive oil and season with Dad's steak seasoning.
  • Place the tenderloins on the grill on the direct side at 375 degrees. Let them roast over the fire for 10 minutes flipping them halfway through.  Remove once the internal temperature reaches 140 degrees.  Cover with foil and let them rest for 10 minutes.
