Fried rice is one of those fast and easy dinner recipes to make on a whim that everyone will enjoy.  I’ve already made chicken, steak and shrimp fried rice, so it was only fitting to make pork fried rice this time around.  It’s a very filling meal and perfect for those picky eaters since it has protein, carbs and veggies all in one. The slight hints of ginger, garlic and soy are the perfect balance to the plain dish.

Step 1: How to cook rice.

Pork Fried Rice Ingredients

Before testing my hibachi skills on the griddle, I had to cook the rice.  It’s pretty simple, even if you don’t have a rice maker or instapot. You can also use day old leftover rice.

Start with rinsing the rice. This step will help remove excess starch, resulting in grains to separate better when cooked.

Next, in a sauce pan, pour 1.5 cups of dry white rice, 3 cups of water and a little salt.  Let if cook until the water starts to boil.

Turn down to simmer, cover with a lid and let it cook until all the water has evaporated into the rice.  Do not remove lid to peak or stir.  Once the liquid is gone, let it rest for a few minutes and fluff with a fork.

Set aside for 24 hrs.  You can also use any leftover white rice.

Step 2: Griddle time!

Finally, time to use my Loco griddle.

To get things cooking, cut up a few pork loin chops into bite size cubes.  Sprinkle some corn starch, add soy sauce and mix it in with the meat.  Make sure to cover each cube.  Let it marinade for 30 minutes while you get the rest of the ingredients and griddle ready.

Pork marinade

Preheat the griddle to a medium heat around 375 degrees.  On one side of the flat top, throw on the marinated pork chop cubes and let them cook flipping them every few minutes for an even cook all around.

While the pork is on the grill, finely chop up some fresh garlic and ginger and add it to the griddle in a clean space. Add frozen or fresh chopped carrots and peas and mix it in with the roasted garlic and ginger.  Continue to flip the ingredients so they cook on all sides.

Separately, add in the day old rice and let if warm up on the flat top.

Once both are warmed up and have some color, mix the rice and veggies together. Pour some soy sauce and sesame oil and continue to mix hibachi style. Season with garlic and onion powder and continue to flip.

While the pork is cooking, in the center of the rice mix, place some cubed butter and eggs.  Scramble the eggs until cooked.

Finally, add in the cooked pork and 1/4 cup of chopped green onion and mix everything together one last time.

Pork fried rice is a great protein packed meal that is fast and easy to make with the whole family enjoying a delicious meal.  And we had lots of leftovers!

  1. When do I add the garlic and onion powder? Also, the ingredient list states 1/4 cup of green onions, while the end of the recipe states 1/2 cup of green onions?

For some odd reason this never popped up over the countless online recipes I’ve tried. This is the absolute best! Flavorful, tender, delicious! This recipe puts “Allrecipes” to shame! It’ll be my go to from now on. Can’t wait to try his other recipes!

I have yet to meet a Pork Fried Rice I don’t like. This one seems a bit bland. I wish I knew the secret handshake to make it have the taste we get with take out.

OK – One questions – what do I do with the “1 tbsp Garlic powder & 1 tbsp Onion powder”?? I may be crazy but it isn’t mentioned in the directions.
