In the summer, I love grilling up fish or any type of ocean critters. They are full of flavor, simple ingredients and very fast cooks. It was no different for these grilled prawns. I used Carabinero shrimp which are more expensive than regular full shrimp, but they are also 4 times the size! Just a sprinkle of salt and some homemade garlic butter made these grilled prawns an unforgettable treat.

Step 1: Make the garlic butter first.
To really get a robust garlicky flavor, I highly recommend you roast a whole head of garlic on the grill. While freshly minced garlic will also work, there is something so rich and creamy about roasted garlic.
Preheat the grill to 375 degrees and set for direct heat. Cover the garlic head in foil, twist the top shut and roast for 1 hour. Remove and let it cool off.
Next, in a mixing bowl, add room temperature stick of butter, squeeze out the roasted garlic, grated parmesan cheese and Dad’s Steak seasoning. Mash and mix the ingredients together until everything is well blended and smooth.

Step 2: Time to grill the prawns.
Carabinero’s have so much flavor, I decided to keep seasoning to a minimum. Drizzle olive oil on the straighten prawns and season with coarse salt.
Over direct high heat, place the prawns on the grill and cook 2 minutes per side. Add a halved lemon on the grill to get a nice char on the slice.
Once the grilled prawns are done, remove off the grill. Spread the homemade garlic butter on a few sourdough bread slices and toast on the grill.
Before serving, squeeze the grilled lemon over the grilled prawns and toasted bread and enjoy!
