This smothered pork chops recipe is comfort food at it’s finest.  The sweetness from the onions along with the savoriness of the pork chops make for the perfect weeknight dinner.  Best of all it’s super easy to make.  

Step 1: Quick sear on the pork chops first.

For this recipe I made everything on the grill cooking  it as a 1 pan meal. But before you can do that, the pork chops need a nice quick sear to give them color and char which will help with flavor.

For this recipe I used bone-in pork chops.  The bone adds an additional depth of flavor making the dish just that much better.  Season all sides with Dad’s All Purpose rub and set aside while you preheat the grill.  During this time, the meat will sweat, absorbing the savory flavors of the rub.

Preheat the grill to 400 degrees and set for direct heat.  Place the seasoned chops directly on the grates and grill 2 minutes per side and remove.

Step 2: Sauté the onions.

The secret to this recipe is in the onions. I used Vidalia onions which are naturally sweet making them the perfect pairing to pork.

Slice a few onions, chop up some bacon and drop in all in a cast iron skillet along with some butter.  Place the skillet on the grill and sauté at the same temperature as used on the pork chops.  Once the onions are tender, add some flour and more of Dad’s All Purpose rub.  Cook for another 2-3 minutes to allow the raw flour flavor to cook off. Next add chicken stock and continue to cook for another minute allowing the stock to mix in with the onions.  

Now that the onions are ready, it’s time to add in the pork.  Place the charred pork chops into the sauteed onions and let it all cook together for the final 10 minutes. 

I also made grilled onion medallions which were crunchy, sweet and worked perfectly as a side dish.  Slice 1 inch thick medallions and skewer them.  Drizzle with some olive oil and place them directly on the grill grates 1 minute per side to get a nice char on both sides.  

Serve the grilled onion medallions along side the smothered pork chops and enjoy!

Smothered Pork Chops

Cook Time: 30 minutes
Servings: 4 People

Ingredients 

  • 2 Bone-in pork chops
  • 2 tbsp Dad's all purpose rub (pork chop seasoning)
  • 3 Vidalia onions
  • 2 Strips of bacon
  • 1/2 stick Unsalted butter
  • 1 cup Chicken stock
  • 1 tbsp Flour
  • 1 tsp Dad's all purpose rub (for the onions)

Instructions 

  • Season all sides with Dad's All Purpose rub
