Preheat the grill to 400 degrees and set for direct heat. Place the seasoned chops directly on the grates and grill 2 minutes per side and remove.
Slice a few onions, chop up some bacon and drop in all in a cast iron skillet along with some butter. Place the skillet on the grill and sauté at the same temperature as used on the pork chops.
Once the onions are tender, add some flour and more of Dad's All Purpose rub. Cook for another 2-3 minutes to allow the raw flour flavor to cook off, next add chicken stock.Continue to cook for another 1 minute allowing the stock to mix in with the onions.
Place the charred pork chops into the sautéed onions and let it all cook together for the final 10 minutes.
For the grilled onion medallions which were crunchy, sweet and worked perfectly as a side dish. Slice 1inch thick medallions and skewer them. Drizzle with some olive oil and place them directly on the grill grates 1 minute per side to get a nice char on both sides.
