Who doesn’t like a good burger! What’s best about them is you can really play around with flavors and textures and customize to your liking. You know I like Mexican inspired flavors and that’s exactly what I did with this grilled Chipotle Burger. The smokey chipotle flavors in the beef and creamy adobo sauce took this burger up a few notches. It’s a great recipe especially with summer just around the corner.

Step 1: How to make the perfect burger patty.
The components to the grilled Chipotle Burger are very simple.
For the patty, I went with a 80/20 blend of ground beef. Chop up a few chipotle peppers and add them to the beef. Generously season with Dad’s All Purpose rub and mix everything together making sure it’s evenly distributed throughout.
For the patty molding, shape by hand or use a burger press to ensure all patties are the same size. You can find burger presses at any local hardware store. Even sizes result in even cooks.
Take a handful of mixed ground beef and weigh each scoop to 1/4 lbs. Roll into an even balls and use the burger press to shape the patty or flatten them into 1/2 inch patties by hand. I highly recommend using parchment paper on the base of the patty to keep it from sticking to the surface. Place the formed patties in the fridge to firm up while you prepare the cheese sauce.

Step 2: How to make an adobo burger sauce.
This creamy savory sauce is the perfect compliment to the spicy Chipotle burger patty.
In a mixing bowl, add mayo, the adobo sauce from the chipotle peppers, freshly squeezed lime juice and a dash of Dad’s All Purpose rub. Mix the ingredients together and set aside.
Step 3: Time to grill up the Chipotle Burger.
You can cook these patties multiple way. Grill, griddle or cast iron pan on the stove top. They all come out similar. If you are making these at home, make sure to have a strong ventilation system or open a window. For the grill, preheat the it to 400 degrees and set for direct heat. Keep the patties on the grill for about 8 minutes flipping them half way through. Same applies to making it at home or the griddle. Before removing the chipotle burger patties off the grill, add a slice of pepper jack cheese to each and let it melt over the beef.
Remove the patties from the grill at 135 degrees internal temperature. Let them rest for 10 minutes before assembling the burger.
To assemble, toast the burger buns, add some crunchy lettuce, tomato and avocado slices and top it off with the creamy adobo sauce. Enjoy!

- 4 Burger buns

- 1 Avocado

Creamy Adobo Sauce Ingredients
- 1/4 cup Mayo
- 1 can Adobo sauce from the chipotle peppers
- 1 Lime
Instructions
- In a mixing bowl, add ground beef, Dad's All Purpose rub and chopped up chipotle peppers from the adobo sauce can. Mix it all together and scoop out 1/4 lb. balls. Form the patties using a burger press or by hand to 1/2 inch thickness. Refrigerate for 15 minutes.
- For the adobo sauce, in a mixing bowl, add mayo, the adobo sauce from the chipotle peppers, freshly squeezed lime juice and a dash of Dad's All Purpose rub. Mix the ingredients together and set aside.
