One huge food staple in English cuisine are Fish and Chips. It’s a deliciously deep fried white fish with crispy fries that make for a perfect home cooked meal.  Simple ingredients, flavorful, tender and crispy.  The perfect combination.  

Step 1: How to make homemade french fries.

Homemade french fries are the best!  You can bake them, air fry them or my preference deep fry them in peanut oil.

To get started, thoroughly wash a few russet potatoes and cut them into long strips keeping the skin on.  Dunk them into an ice bath for 15 minutes.  This process releases starch from the vegetable, helping it crisp up once cooked. 

In true Grillinwithdad fashion, I made my french fries on the grill, but stove top or deep fryer will work just as well.  First, remove the potatoes from the water and pat them dry.  Make sure to remove as much water as possible as water and hot oil do not mix well together.

Preheat the grill and place a large dutch oven directly on the grates.  Full it half way with peanut oil and wait until the oil reaches 350 degrees.  The temperature is very important.  If it fluctuates or goes down, you risk getting soft and greasy fries.

Total cook time for the fries or chips is 5-7 minutes.  Remove them once you see a nice golden brown color.  Sprinkle with kosher salt and let them rest on a wire rack.

Step 2: How to fry the perfect fish.

This dish is not complete without it’s protein – the fish!  For this recipe, I went with a cod filet, however any white fish will work.  

The batter is a crucial part in this recipe.  You can make your own flour and spice mix if you have a good recipe, but I went with Mr. Makeithappen’s new seasoned flour and it was perfect.  Seasoned well, there was no need for any additional salt or pepper on the fish filets.  Pour the seasoned flour mix into a mixing bowl, add some baking powder and a can of beer.  Whisk the ingredients together.

Coat the fish filets in the dry seasoning first and them dunk them into the batter.  Make sure to get all sides.  Gently, place it in the same oil at 350 degrees and fry for about 5-6 minutes until the batter is golden brown in color.  

Squeeze some lemon juice over the fish and chips and serve with malt vinegar and mashed peas.  Enjoy!

  • 1 cup Seasoned flour
  • 1 can Beer
  • 1 tsp Baking powder
