Wondering what to do with leftover chicken?  How about some homemade zesty nacho chicken buns! This easy savory recipe is the perfect weeknight dinner or entertaining food. It is loaded with protein and spice all wrapped in a warm and flaky biscuit making it perfect for eating on the go. 

Step 1: It’s all in the filling.

Zesty Nacho Chicken Bun ingredients

With a few simple ingredients, you can make the most delicious zesty nacho chicken buns.  In a mixing bowl, add shredded leftover chicken or you can make a spatchcock chicken, zesty nacho cheese dip, shredded cheddar cheese, diced jalapeno and a little bit of Dad’s All Purpose seasoning (if your chicken is plain).  Mix all the ingredients together and set aside.

This recipe requires Pillsbury jumbo biscuit dough.  The individual servings are the perfect size that allow the food to be transported for on the go activities.

Take each Pillsbury dough piece and roll it out. Add a spoonfull of the filling onto each flat round and close it shut but pinching the ends together.

In a cast iron skillet or any foil pan, lay the filled pies with the closures facing down.  Make sure there is room between the dough balls as they will grow throughout the grilling process.

Brush some melted butter on top of biscuits that will create a nice crispy flaky layer.  Finish them off by sprinkling some everything bagel seasoning.

Step 2: Grilled Zesty Nacho Chicken Buns.

Never thought about making buns on the grill?  The beauty of this appliance is that it really can be used for anything!  Case in point grilled zesty nacho chicken buns.

Warm up the grill to 350 degrees indirect heat.  The buns will cook for 20-30 minutes until the outer biscuit layer gets to a nice golden brown color. 

With every bite of the biscuit, you’ll get the gooey goodness from the dip and cheese and the savory taste of the chicken and dip.  A mouth watering experience with each bite. Enjoy!

Zesty Nacho Chicken Buns

Servings: 4 People

Ingredients 

  • 1 lbs Shredded chicken
  • 1 cup Deans Zesty Nacho Cheese dip
  • 2 Jalapenos
  • 1/4 cup Shredded cheddar cheese
  • 1 tsp All purpose BBQ seasoning
  • 1 pkg Pillsbury biscuit dough

Instructions 

  • In a mixing bowl, add shredded leftover chicken or you can make a spatchcock chicken, zesty nacho cheese dip, shredded cheddar cheese, diced jalapeno and a little bit of all purpose BBQ seasoning (if your chicken is plain).  Mix all the ingredients together and set aside.
  • Roll it out each biscuit dough to form a small flat pizza pie
  • Add a spoon full of the filling onto each flat pie and close it shut but pinching the ends together.
  • In a cast iron skillet or any foil pan, lay the filled pies with the closures facing down.  Make sure there is room between the dough balls as they will grow as they cook through the grilling process.
  • Brush some melted butter on top of biscuits.
  • Warm up the grill to 350 degrees indirect heat.
  • Place the pan on the grill and let if cook for20-30 minutes or until the outer biscuit crust gets a nice golden brown.

    This is one of our favorite GWD recipes (tho, let’s be honest, it’s difficult to choose). These are a family favorite and super easy to whip up. Made them most recently for the Super Bowl. I’ve made them several times and don’t adjust the recipe at all.
