Sep 1: How to make the best greek style marinade.
This delicious lemon marinade is what gives the grilled greek chicken it’s flavor. In a large bowl, add olive oil, red wine vinegar, honey, dried oregano, paprika, garlic powder, salt and pepper. Whisk the ingredients together.
For this recipe I used a whole chicken that I cut up into pieces. You can do the same or for convenience purchase a pre cut bird or just get the the parts of the chicken you like best.
Place the raw chicken into the marinade making sure to cover everything in the liquid. Place in the fridge for at least 1 hour allowing the meat to absorb all the delicious summer flavors.

Step 2: How to grill perfect greek chicken.
Before you get the grill going, the potatoes need to be prepped.
I used yellow potatoes for this recipe. Start with pealing the skin and slicing them into quarters. Boil them in water to soften them up. The should be fork soft. Avoid mushy potatoes.
Preheat the grill to 300 degrees and set for direct heat. The lower temperature is to avoid the meat from burning. Place the marinated chicken on the grill and and flip every 2-3 minutes to get an even cook throughout. Grill until the internal temperature reaches 165 degrees for the white meat and 175 degrees for dark meat.
Remove the chicken off the grill and let it rest.
Now it’s time to grill the greek potatoes. In a mixing bowl, add olive oil, minced garlic, dried oregano, salt and freshly squeezed lemon juice. Mix the ingredients together. Toss the cooked potatoes in the mixture and place them in a grill pan on the grill to crisp them up. This should take no longer than 5 minutes. All you are looking for is some nice grilled color on the starch.
Serve the grilled greek chicken along with the greek potatoes, drizzle with some finishing olive oil and serve. Enjoy!
